How To make Ham Steak with Cranberries
Ingredients

each
ham steaks, or 4-1/2 inch thick slices left over baked ham
2
tablespoon
butter
2
tablespoon
mild prepared mustard
8
oz
cranberry sauce
1
orange, grated rind and juice
Directions:
Soak the clay pot in water for 10 minutes. Place the ham in the pot. Dot each ham steak with butter and add all the remaining ingredients. Cover and place in a cold oven. Adjust the heat to 400 degrees F. and cook for 35 minutes.

Intro
I love a roast dinner so decided to put together a set of videos showing how I make each part. A traditional roast has the meat as the centre piece. I always worried my roasts lacked the wow factor but now this is a great addition to your roast/Christmas dinner.
TIP: Once the joint is steamed you can serve it straight away or cut into slices and shallow fry for a crispier texture. The leftovers will be great for salads or in sandwiches.
Serves 5-7 people
You will need
130g chickpeas - drained
70g cashews - soaked overnight or in just boiled water for 15 minutes. Drain off water.
100g oat flour - I made my own flour blending 100g of oats in a blender to a fine flour.
50g cranberries
150ml plant milk - unsweetened
120g vital wheat gluten
4 tbsp olive oil
4 tbsp nutritional yeast
1 tsp onion powder
2 tbsp chicken seasoning
1 tsp garlic powder
1/2 tsp pink/sea salt
Season with black pepper
Method
To a blender/food processor add the milk, chickpeas, oil and cashews. Blend until you have a creamy liquid. A few small fine lumps are fine, these add to the texture. Add the vital wheat gluten, oat flour, onion & garlic powder, salt, pepper, seasoning and nutritional yeast.
Blend until the mixture turns to dough. Keep blending for 2-3 minutes. If the mixture is too wet add a little more vital wheat gluten.
In a large bowl add the cranberries and dough. Kneed the dough so that all the cranberries are combined into the dough. Shape into a small loaf/joint and wrap in parchment paper and then foil.
Place in a steamer and steam for 1 hour and ten minutes. Serve immediately with lots of gravy.

1 8-10 lb Bone-In Spiral Sliced Ham
3-4 cups apple juice
1 onion
1 orange
2 cinnamon sticks
1tbsp black peppercorns
4 cloves of garlic
Glaze:
1/2 stick butter
1 cup brown sugar
juice of 1 orange
1/4 cup honey
1/4 cup Apple Jelly
1/4 cup peach preserves
2-3 tbsp sriracha
2 tbsp Dijon Mustard
pinch of cinnamon and nutmeg
Orange Zest
1/2 cup pan drippings
Directions:
Preheat oven to 325 degrees. Place Ham in roasting pan or foil pan with wire rack. Add all veggies and aromatics below and cover in foil. Place in oven for about 1-2 hours or until it gets up to about 135-145 degrees internal temp. Prep glaze in a sauce pan - whisking until smooth. Pour glaze over ham and place back in the oven. Re-apply by basting every 5-10 minutes until the ham reaches 165 degrees internal temp. Total cook time is about 15 minutes per pound.
