How To make Acapulco Chicken (En Escabeche)
Ingredients

chicken broth, unsalted, defatted
1
tablespoon
olive oil
2
teaspoon
cumin, ground
2
tablespoons
pickling spice
1/2
each
red bell pepper, sliced
1
pound
chicken breast, halves boneless, skinless
1/2
each
yellow bell pepper, sliced
2
tablespoons
jalapeno pepper, minced with seeds
1
medium
onion, halved, thinly sliced
1/3
cup
rice wine vinegar
1/4
cup
cilantro, leaves, fresh
3
tablespoons
garlic, cloves, minced
Directions:
Use baked (no oil) tortilla chips.
Boil broth and pickling spice in heavy large saucepan ten minutes. Strain and return liquid to saucepan. Add chicken, onion, vinegar, garlic, oil and cumin to pan. Simmer over very low heat until chicken is just cooked through, about ten minutes.
Transfer chicken and onions to shallow dish. Top with bell peppers and minced jalapeno. Boil cooking liquid until reduced to 2/3 c, about ten minutes.
Pour liquid over chicken and let cool 30 minutes. Add cilantro to chicken mixture. Cover and refrigerate until well chilled, turning chicken occasionally, about 4 hours (can be prepared one day ahead). Slice chicken and transfer to plates.
Top with marinated vegetables and some of the juices.

Ingredientes:
• 500 gr de papa seca para carapulcra
• 600 gr de carne de cerdo (Yo usé pierna deshuesada sin piel)
• 6 encuentros de pollo sin grasa y sin piel (Yo usé cadera)
• 100 gr de maní tostado y molido
• 1 cebolla mediana cortada en cuadros muy pequeños
• 2 ajíes amarillos frescos y licuados con un chorrito de agua (Si no les gusta el picante, no olviden retirar las venas o la pulpa blanca)
• 3 o 4 cucharadas de ají colorado o panca licuado o molido
• 1 cda. de ajos molidos
• 1/3 de taza de vino tinto
• 2 clavos de olor (Opcional)
• 1/4 cdta. de comino
• 1/2 cdta. de pimienta negra
• 1/2 cdta. de orégano
• 1/4 de taza de aceite
• Sal al gusto
Para la guarnición:
• Yuca sancochada
• Arroz blanco

Rolled Crispy Chicken Tacos/Flautas
Servings: 33 tacos
Cook chicken in Broth
2 lbs bone-in, chicken breast
1/2 white onion, medium
6 garlic cloves
2 tomato, roma (6 oz)
1 jalapeno
2 carrots
1 TBSP Salt, kosher
1 tsp black peppercorns
4 ea sprigs of mint
Small bunch thyme
10 cups water
10 oz tomatillos
Pickled red onions
1/2 red onion, thinly, large
3 habanero
1 jalapeños
1/4 cup lime juice
1 tsp sugar
To taste white pepper
1 tsp dry mexican oregano
1 tsp salt, kosher
1/4 cup white wine vinegar
1/2 cup water
Make the salsa
Cooked tomatillos, onion, tomato, jalapeno, garlic.
2 cups broth
2 raw garlic, cloves
1/2 bunch cilantro
Prepare the shredded chicken
1 tsp kosher, salt
To taste white pepper (1/2 tsp)
2 TBSP smooth olive oil to fry the sauce
Season sauce at the end with 1/2 tsp of kosher salt.
Toppings
Cabbage, shredded
Mexican-style cream
Avocado, diced
Cotija cheese, crumble
Tomato, sliced
Other items you will need:
