How To make Almond Butter Christmas Cake
Ingredients

almonds, finely chopped

raisins, finely cut

milk

teaspoon
vanilla
Directions:
Sift flour once, measure, add baking powder and salt, and sift together three times. Cream butter thoroughly. Add sugar gradually, and cream together until light and fluffy. Add eggs, one at a time, beating thoroughly after each. Add nuts and raisins and beat well. Add flour, alternately with milk, a small amount at a time, beating after each addition until smooth. Add vanilla.
Bake in two greased 9-inch layer pans in moderate oven (375 degrees F.) 25 minutes, or until done. Spread Boiled Frosting (see recipe) between layers and on top and sides of cake. Decorate top of cake with wreath of holly, using pieces of maraschino cherries or red cinnamon candies for berries, and slices of angelica or citron for leaves and stems. Or decorate with poinsettias made of candied cherries. Slice cherries in rings, cut rings in half, and arrange to form petals of poinsettias. If desired, Lemon butter Frosting (see recipe) may be used.
Boiled Frosting :
1/2 c water
1/3 c light corn syrup
2 1/2 c sugar
2 ea egg whites, large
1 1/2 ts vanilla
Combine water, corn syrup and sugar in a medium saucepan. Heat to boiling; boil until the mixture thickens and forms a ball when a small spoonful is dropped into cold water (about 240F on a candy thermometer).
Beat the egg whites in a large bowl of the electric mixer until stiff. Slowly beat in the hot syrup. Combine to beat until spreading consistency. Beat in vanilla.
Lemon butter Frosting :
4 tb butter
3 c confectioner's sugar
2 tb lemon juice
2 tb water
In bowl combine butter, sugar, lemon juice and enough water for spreading consistency; beat well.

Directions:
First of all take a pan and place one butter paper inside. Then apply melted butter over butter paper. Then align half cut almonds over the butter paper. After that keep this pan in refrigerator at least fifteen minutes. Then prepare a mixture for cake with melted butter, Sugar, eggs, All-purpose flour, baking powder and vanilla essence. Mix well until it becomes smooth mixture. Then add four to five table spoons crushed almonds. Then put this mixture in pan and bake in oven for twenty five minutes at 180° C. After twenty five minutes check with knife whether baked or not. Put knife in cake if does not stick with knife it is baked. Put some honey over cake it is ready to eat.

Moist & Fluffy Butter Cake Recipe ❤ 超鬆軟濕潤的~古早味牛油蛋糕
This recipe is using flour method. The taste is super nice & moist. It takes double the time in mixing the butter, flour & sugar. Mixing the batter until creamy, light & fluffy. No worried on oil separation.
Ingredients
(A)
250 g High Butter
230 g Superfine Flour
1/4 tsp Baking Powder
(B)
1 g Salt
150 g Sugar
(C)
240 g / 4 Grade A Egg
(D)
50 g Whipping Cream
(E)
2 tsp Coco Powder
2 tsp Water
60 g Almond Flakes
Methods:
1. Beat Ingredients (A) Butter with low speed for 1 minutes and add 1/2 portion of the sieved flour mix well combine follow by the balance flour. Mix well combine with low speed for for 1 minutes.
2. Continue to beat with high speed for 10 - 15 minutes until pale white , creamy & fluffy. (stop each 2 minutes to scrape the side of the bowl to make sure batter mix evenly.)
3. Add ingredient (B) beat for another 3 minutes with medium speed.
4. Gradually add egg one at a time & each time beat for 1 minutes with low speed.
5. Fold ingredients (D) until well combine.
6. Mix 2 tsp coco powder with water & mix a small potion with batter.
7. Pour the batter in a greased & lined 8 cake pan.
8. Spread almond flakes on top of the cake.
8. Preheat oven 190°C bake for 40 minutes until the cake is cook.

This recipe was an all around favorite in the Odense Recipe Contest and a big favorite of mine!
ALMOND BUTTER CAKE:
RECIPE:
Ingredients:
1 1/3 cups sugar
1 - 7 oz. box Odense Almond Paste
10 tbsp. (1 1/4 sticks) of butter - room temperature
6 eggs - room temperature
1 tsp. vanilla extract
1 cup all purpose flour
1 tsp. baking powder
1/4 tsp. salt
DIRECTIONS:
Preheat oven to 325 degrees
Position rack in middle of oven.
Line bottom of Springform cake pan with
parchment paper, or butter and lightly flour, tapping
any excess flour off.
Grate Almond Paste on the large hole side of a box grater..
Add Almond Paste and sugar to a mixing bowl.
Mix by hand until combined and into small crumbs.
Add butter to the Almond Paste mixture. Beat until light
colored and creamy.
Add eggs one at a time, beating well after each addition.
Beat on high for three minutes or until light and fluffy.
Add vanilla and beat until combined.
Whisk together flour, baking powder, and salt.
Add to Almond Paste mixture and stir until incorporated.
Spoon batter into prepared pan.
Bake for 55 to 60 minutes or until toothpick inserted in center
comes out clean.
Cool pan on wire rack for 15 minutes and unmold.
This is an extremely moist cake that will keep well for one week
if well wrapped.

Almond Buttercake. A must have cake recipe in your repertoire. This cake recipe uses the creaming method and easy recipe to make. With any creaming method recipe, the key is mixing the butter and sugar until light and fluffy. Always take the extra step to scrape the side of the mixing bowl. Enjoy a slice of almond buttercake with a dusting of icing sugar and spoonful of whipped cream. Your next favourite cake recipe is waiting for you to try.
Ingredients:
¾ cup (170gm) Unsalted butter(cut the butter into small pieces)
1 ¾ (380gm) caster sugar
3 eggs (room temperature)
1½ tsp vanilla extract
2 ½ (300gm) cake flour or low protein flour
½ tsp salt
2 tsp baking powder
1 cup(240gm) fresh milk (let the milk come to room temperature)
1 cup(50gm) sliced almond( you can use slivered almond also)
2 tbsp icing sugar
Instructions:
1.Preheat oven at 356F/180c, line the baking tray with baking paper
2.Weight all the ingredient individually
3.Weigh cake flour, baking powder, salt and sift them. Keep aside
4.Add semi soft butter to mixer and mix for 2 minutes at low speed
5.Add the caster sugar and mix for 10 minutes at medium speed(remember to scrape the side of mixing bowl)
6.Add in the eggs, one by one (scrape the side of mixing bowl in between adding the eggs)
7.Add in half of sifted dry ingredients at low speed.
8.Genlty pour half of fresh milk(scrape the side of mixing bowl)
9.Add in the balance dry ingredients and milk
10. Add in vanilla extract and sliced almond
11.Pour the batter into baking tray, tap a few times and sprinkle a handful of sliced almond on top
12.Bake at 356F/180c for 30 minutes
13.let the cake cool on cooling tray for 30 minutes and dust with icing sugar before serving

Flour 5 kg
Sugar 5 kg
Dry Fruits 5 kg
Rum 2 litre
Dry spices clove cardamom Dry ginger 100 g
Vanilla essence 50ml
Start by roasting the whole spices in oven and then making a fine powder of it
Sieve flour adding the roasted powdered spices
Cream the butter add sugar in batches a long with egg
Once all the sugar and eggs are mixed in add the flour and vanilla
Add dry fruits a d mix well
Bake in oven at 165 for half an hour
