Easy Christmas Cookie Recipe ???? | Pecan Snowballs that melt in your mouth [Eggless]
In todays video, I'm sharing a really easy [ONLY 6 INGREDIENTS), and quick Christmas cookie recipe that you can make for this holiday season. It's called snowball cookie also known as Russian tea cakes or Mexican wedding cookies. This variation I am making uses pecan nuts but you can replace it with any other nut of choice or even dried fruits or cherries. These cookies are so rich, buttery and the coating of powdered sugar makes it a very fancy festive cookie that will make any guest happy. The best part about these cookies are that it's so easy to make them, just dump all the ingredients in a bowl, get in with your hands to for a dough and the cookie is ready in no time. Pecan Snowball Cookie Recipe:
1/2 cup salted butter (112g) at room temp
3 tbsp sugar (45g)
1 cup (103g) toasted and crushed pecans or any other nuts
1 cup (103g) all purpose flour
vanilla
1 cup icing sugar for coating
bake at 180c/ 350f for 14-16mins
yields around 20 cookies

Super Simple Butterball Cookies! They melt in your mouth and taste buttery. You might have a version of butterball cookies recipe stashed somewhere, but this recipe uses minimal amounts of ingredients you already have handy. No eggs needed! No leavening! It’s the easiest recipe to make in comparison to others for the same cookie. It’s great for holidays, special occasions, or anytime. If you’re making a cookie plate with various types of cookies, this one is a classic one to include. Hope you try it out! The recipe is below. Wishing you Peace Love And Tasty Eats!
Super Simple Butterball Cookies
1/2 cup (8 tablespoons total) softened butter
2 tablespoons sugar
1 teaspoon vanilla extract
1 cup flour
1/2 cup chopped nuts (I used walnuts)
After mixing all the above ingredients, refrigerate dough for 15-30 minutes or until able to easily form dough into marble-sized balls.
You’ll need about 1/2 cup confectioners’ sugar (for coating cookies once baked)
Bake in 350° F oven for 10 minutes until firm, but soft. Do not brown the cookies. Roll in confectioners’ sugar while still warm (after 5 minutes cooled on cookie sheet). For more coverage, roll again once cookies have completely cooled.
Yield: 2 dozen cookies

Ingredients:
1 cup butter, softened
1/3 cup sugar
1 tsp vanilla extract
1/2 tsp salt
2 cups all-purpose flour
1 cup pecans, finely chopped
1 cup powdered sugar
Directions:
To a bowl, add in the butter, sugar and vanilla extract. With an electric mixer, mix until creamy. Next add in the salt and flour. Mix until combined. The dough should be crumbly.
Add in the finely chopped pecans and mix.
With a cookie scooper, about the size of a tbsp, scoop out some dough, roll it into a ball and place it on a parchment lined baking sheet. These cookies won't spread much, if at all. Into a preheated oven at 300 degrees for 27 minutes. They're done when their bottoms are lightly golden brown.
While the cookie is still hot from the oven, roll it in the powdered sugar. Once coated, place on a cooling rack to finish cooling. The powdered sugar should melt onto the cookie since it's still hot from the oven.
After the cookies are completely cooled, sprinkle on a light layer of powdered sugar so you can pick it up without taking off the melted layer. Then roll the cookie once more in powdered sugar.
Storing the cookies: Store in an air tight container with a piece of parchment between each layer if stacking.
