Super Simple Rainbow Shortbread Bites
These little cookie bites are always a HIT at parties!
Shortbread Bites Recipe:
1/2 cup butter, room temperature
1/4 cup sugar
1/4 tsp almond or vanilla extract
1 1/4 cup All Purpose flour
1/4 tsp salt
4 tsp sprinkles
-Heat oven to 325 degrees
-Combine butter, sugar and almond or vanilla extract
-Beat at medium speed until creamy
-Reduce speed to low, add flour & salt. Beat until well
mixed. Stir in sprinkles
-Knead mixture 4-5 times in bowl until dough forms a ball.
-Pat dough evenly onto cutting board (I covered mine in plastic wrap to make things easier/cleaner!)
-Cut dough into small squares
-Place squares 1/2 inch apart on an ungreased
cookie sheet. Bake approximately 15 minutes or until
bottoms are a golden brown.

2 sticks softened butter
2 cups flour
3/4 cup confectioners sugar
1/8 tsp salt
Preheat oven to 325 degrees . Spray pan with cooking spray and set aside.
Mix all ingredients by hand, place in pan or mold.
Bake 35-45 minutes, start checking for doneness at 30 minutes.
Shortbread should be light golden.
Cool 15 minutes, cut while still warm.

Scottish Shortbread Biscuits Recipe | Best Shortbread Recipe | All Butter Shortbread Biscuits Recipe
My recent trip to Scotland encouraged me to share my Scottish Shortbread recipe with you all! It's so delicious with a buttery flavour and wonderful texture!
The basic recipe for shortbread has a 2-4-6 recipe method using 2oz Sugar, 4oz Butter and 6oz Flour and that's what I use, but with a slight tweak!

155g (5oz) Plain Flour (1 Cup or 236ml)
30g (1oz) Fine Semolina (3 TBSP or 53ml)
125g (4oz) Salted Butter (1/2 Cup or 188ml)
60g (2oz) Caster Sugar (1/3 Cup or 78ml)

How to Make Shortbread for the Holidays - Hartstone Shortbread Mold
This was my first time making shortbread. Here is the recipe that conveniently came with the Hartstone Shortbread Mold:
1/4 cup of confectioners sugar (next time I will add a tablespoon extra)
1/4 cup fine granulated sugar
1 stick of butter (next time I will use salted butter and soften it to room temperature)
1/3 cup rice flour
1 - 2/3 cups of unbleached flour
Preheat oven to 325
Cream butter and sugar in large bowl.
Gradually incorporate flours with hands to butter-sugar mixture until dough is smooth. Do not overwork.
Pat dough into mold to thickness of 1/2 inch.
Bake approximately 40-45 minutes... (recipe calls for 1 hour but mine was lightly browning at 40 min.)
Let cool, then gently knife around perimeter to loosen it from the mold. Carefully remove to rack. (I flipped mine onto a cutting board after about 5 minutes cooling and then put it on a serving plate.)

600g A. P Flour
400g unsalted butter
200g caster sugar
A pinch of salt - HOW BIG UP TO YOU - SALT TO TASTE -

Cooking with salt is not inherently bad for you, but it becomes a concern when consumed in excess. Salt, or sodium chloride, is essential for bodily functions such as nerve transmission, muscle contraction, and fluid balance. However, excessive salt intake is linked to health issues like high blood pressure, heart disease, stroke, and kidney disease.
Many people are cautious about salt intake due to its prevalence in many diets, particularly in processed and restaurant foods. As a result, according to the American Heart Association, most people consume much more than the recommended daily limit of sodium, which is less than 2,300 milligrams per day. Some guidelines even recommend a lower limit of 1,500 milligrams for certain populations.
The recommended daily sodium intake, 2,300 milligrams, is equivalent to 1 teaspoon of table salt.
Unless you eat the whole tray of biscuits in one go, the salt levels DO NOT exceed any recommended intake levels – most sensible people will only consume a couple of biscuits.
Hope this alleviates all the whining minnies and flippant comments about salt – a PINCH of salt to your taste!
