TWITCH REPLAY: Chocolate chip cookies on my first ever BAKING STREAM! (12/11/22 stream)

Here's the recipe if you'd like to make these chocolate chip cookies too (you don't even need a mixer!), followed by some of the tools & things I used:
MY FAVORITE CHOCOLATE CHIP COOKIE RECIPE
makes 16 cookies
Ingredients:
14 TBs (1 3/4 sticks) unsalted butter (divided)
1/2 c. sugar
3/4 c. brown sugar (packed)
1 tsp. fine grain salt
2 tsp. vanilla extract
1 egg
1 egg yolk
1/2 tsp. baking soda
1 3/4 c. all-purpose flour
1 1/2 c. chocolate chips (bittersweet recommended, but semisweet will do)
Instructions:
1. If you're a person who preheats and prepares your baking sheets first (I'm usually not), make sure the oven rack is in the middle position, preheat the oven to 375 degrees, and line two (or three) baking sheets with parchment paper.
2. Brown 10 TBs of the butter: melt 10 TBs of butter in a skillet over medium-high heat. Stir melted butter constantly as it continues to heat, foam up, and start to brown. It's ready when it turns golden and starts smelling toasty, and you might see some bits darkening. Remove skillet from heat, and use a spatula to scrape butter into your mixing bowl. Add the remaining 4 TBs of butter, and whisk until completely melted.
3. Add both sugars, salt, and vanilla to butter, and whisk to combine. Add the egg and yolk and whisk for about 30 seconds. Let mixture stand for 3 minutes, then whisk for another 30 seconds. Repeat this two more times -- the mixture will look thick and smooth. Using a wooden spoon, stir in the baking soda until incorporated. Add the flour, and stir/fold gently until it's *almost* mixed in -- we still need to stir in the chips and don't want to overmix it. Add the chocolate chips (in the video I used about 1 3/4 cups, but I think it ended up being slightly too much) and stir gently until uniform without any flour pockets.
3.5. This is when I heat the oven and prep the cookie sheets.
4. Divide dough into 16 portions (after taking a little bit out for tasting), each approx. 3 tablespoons. Use a #24 cookie scoop or roll them in your hands to shape into balls. Place them on the cookie sheet 2 inches apart -- the original recipe says 8 cookies per sheet, but I decided to do less per sheet and use three instead of two. So there was less chance of them running into each other.
5. Bake cookies one tray at a time, 10 to 14 minutes (depending on your oven), rotating the sheet halfway through baking. They're done when they're golden brown but still puffy, the edges look set and slightly darker but the center looks soft. Transfer baking sheet to wire rack, and let cool completely on the sheet.
