Today's recipe is Goan Bolinhas,a melt in the mouth Baked Delight.

Ingredients
250 gms/1 & 1/4 cup of powdered sugar
400 ml/1 & 2/3 cup of water
250 gms /1 & 1/4 cup of semolina/rawa
1 tsp salt
250 gms/2 & 1/4 cup of dessicated coconut
2 tbsp of ghee/clarified butter
3 egg yolks
3 egg whites
2 tsp of cardammon/elaichi powder
1 tsp of baking powder
3 tbsp of all purpose flour/maida

Lemon Gem Christmas Cookies

It's been cookie heaven at my house recently. My fiance gets a monster craving for them every Christmas. In other words, I blame him for the extra few pounds gained during the holidays (or at least that's easier to do than NOT eat the cookies). On the upside, the house smells just like Christmas should and, considering we've had everything from classic sugar cookies to giant chocolate chip cookies in the oven, it wasn't hard to get the scent to stick around.

Since Christmas is just around the corner (and I had yet to bring any holiday baked goods to work) I decided that a new cookie recipe I've been eye balling would be the perfect thing (thank you Thimbleanna)! These Lemon Gem cookies are as light as air, look extremely nice when laid out on a platter and are vegetarian friendly. Their gentle lemon flavor is enhanced with a kickin' icing made with lemon juice.

Package up a bunch of these for your relatives, guests, or co-workers and watch the compliments pour in. You may want to send the recipe along with your package though; your recipients are sure to call asking for it!

What You'll Need For The Cookies

3/4 cup butter, softened

1/2 cup confectioners' sugar

1 tablespoon grated lemon peel

1 cup all-purpose flour

1/2 cup cornstarch

1/4 cup Christmas sprinkles

What You'll Need For The Lemon Icing

2 tablespoons lemon juice

1/2 teaspoon grated lemon peel

1 cup confectioners' sugar

(optional) Food coloring

Instructions:

1. Cream softened butter with confectioner's sugar until fluffy.

2. Add the 1 tablespoon of grated lemon peel to the creamed mixture until mixed in thoroughly.

3. Mix the flour and cornstarch in a separate bowl.

4. Add the flour/cornstarch mix a fourth at a time to the creamed mixture until mixed in thoroughly.

5. Refrigerate the dough for 1 hour or until workable.

6. Shape the dough into a roll that is about 1 ¾ in diameter.

7. Roll your dough roll in the sprinkles until covered.

8. Refrigerate the dough for at least 2 hours.

9. Slice into ¼ inch thick slices and place them on an ungreased cookie sheet.

10. Bake in a 375 degree preheated oven for 9-11 minutes.

11. Cool the cookies on a cooling rack.

12. Mix together the cup of confectioner's sugar, the lemon juice, the grated lemon peel, and the food coloring (if you're using any).

13. Using a spoon, ice the top of each cookie.

14. Let the icing set and then enjoy!

Talk about melt in your mouth! You take one bite and before you know it you're swept up in a lemony Christmas ride of festive flavor. I could seriously eat all of the cookies in a batch if I felt like being a scrooge. Instead, I've spread the cookie love throughout the office!
