How To make Almond Cookies Chinese American
8 tbsps unsalted butter -- at room temperature
1 c sugar
1 egg
1 tsp almond extract
1/2 c ground almonds
2 c all-purpose flour
1 tsp baking powder
1 pinch salt
1 egg -- for egg wash
Preheat oven to 375F. In large bowl cream butter and sugar. Add egg, almond extract and ground almonds; mix. Combine dry ingredients and add to butter sugar mixture; mix but do not over mix. Roll into log about 12" long. and cut into 16 even pieces. Roll each piece into a ball and flatten slightly. Place on baking tray, brush with egg wash and bake 15 minutes until golden. 1-1/2 c. shortening
1-1/4 c. sugar
1 egg
3 c. all-purpose flour
1 t. salt
1 t. baking soda
2 t. pur almond extract
Red food coloring
Preheat oven to 325°F. Cream the shortening and sugar, add in egg and almond extract. Blend dry ingredients and mix into shortening mixture. Shape dough into rough, one inch diameter balls. Flatten into disks. Press the center of each cook and place a dot of red food coloring in the center of it. Bake for 12 minutes.
