1 c Cake flour
1/4 ts Salt
1/2 c Sugar; scant
1/2 c Butter; soft
1 ts Orange zest; grate
1 lb Egg yolk
1 ts Ground allspice
2 tb Ground almonds
1 lg Egg
Combine flour and 1/8 ts salt on sheet of waxed paper. Set aside. Cream sugar, butter and orange zest in mixer until light and fluffy. Add egg yolk and combine well. On low speed, add flour mixture, allspice and almonds. Mix well. Use 1 tb dough per cookie, spacing them 2" apart on greased baking sheet. Gently flatten dough with fingers into 2-inch rounds. Froth egg and remaining 1/8 ts salt with fork in small bowl. Lightly brush glaze over cookies. (Remaining glaze can be refrigerated up to 5 days and used in other baking). Bake at 350 until cookies are lightly browned around edges, about 11 to 12 minutes. Cool 5 minutes on baking sheet, then transfer to wire rack to cool completely. Store at room temperature in airtight tin for up to a week or freeze up to a month, wrapped airtight (thaw at room temperature in wrapping). 99 cal; 6 gr fat; 55% fat. Source: Abby Mandel -----

* The ingredients can alway be doubled , to your likings ????
Shortcrust pastry
-200 g flour = 1 and 1/2 cups
-175 soft butter = approx. 14 large spoons
-80 g of sugar = 1/3 cup
-100 g of ground almonds
= 1 cup
- 2 egg yolks
- 1 small packet of vanilla sugar
- 2 teaspoons of vanilla extract (almond / optional) if you don’t have vanilla sugar , you can alway add more Vanilla extract.
- Powdered sugar for sprinkling
- Grated orange peel, you can grate on top of the baked cookies for the aroma:) - optional
- ** Execution
- Combine all dry ingredients with a pinch of salt and add butter, egg yolks and vanilla flavor. Then, knead the dough to form a smooth, shiny mass, wrap it in stretch foil and put it in the fridge for about 30-40 minutes. Then roll it out and cut the strips from which we take the dough enough to form croissants or round shape cookies about 2-3 cm.
- Round shaped cookies can be stuffed with chopped almonds, baking chocolate drops (like mine), or jam.
- Preheat the oven to 180 * C / 350*F and bake for 10-15 for up to 21 minutes, check after 10 minutes for doneness . I baked my croissants and round shaped cookies for 21 minutes. because they were thicker! And each oven bakes a little differently **. The cookies were golden in color. They came out delicate, brittle and very crunchy. I heartily recommend cookies and invite you to try them.

INGREDIENTS
* 2 cups (200 g) almond flour (meal)
* ¼ cup (30 g) cacao powder
* ¼ cup (50 g) sugar (or coconut sugar 1/2 cup)
* 1 teaspoon baking powder
* 1 medium egg
*1/8 tsp salt
* 1/3 cup (85 g) milk (any plant milk)
* ¼ cup (64 g) nut butter
* 1 teaspoon vanilla extract
* ½ cup (85 g) chocolate (bar or chips)
Instructions
1. Preheat oven to 350 degrees F (180 C). Line a baking pan with parchment paper and set aside.
3. Combine almond flour, cacao powder, salt, and baking powder in a mixing bowl.
5. In a separate bowl, whisk together egg, sugar, vanilla extract, milk and nut butter until smooth.
6. Add dry ingredients.
7. Stir batter until well combined.
9. Using a small ice cream scoop (or spoon), drop about 2 tablespoons of cookie dough onto the baking pan 1 inch apart.
11. Bake in the oven for 15-20 minutes. Cool cookies on a wire rack then enjoy!

Here in Sicily, these almond cookies are super popular! I would safely say that almost every pastry shop carries them. It was so much fun to re-create such a traditional sweet that I’ve seen for years in bakery shops since I was a kid.
These almond pastries are super easy to make and you only need 3 main ingredients. They are soft and chewy and a great dessert idea.
RECIPE:
250 g peeled almonds (1 cup + 1/3 cup + 1/3 cup)
150 g powdered sugar (about 1 cup)
2 egg whites
Maraschino cherries (about 15 cherries)
1 g Vanillin or 1 tsp vanilla paste (optional)
Lemon zest to your taste (optional)
