#Sunday #earlymorning #bakingtherapy Wanted to make butter pecan cookies but low on pecans. I did have #almonds on hand so made these delightful #almond #coconut #chocolatechip #cookies ! If you are a fan of #almondjoy #candybars like me, you will love these! I have friends and family that don't eat coconut. You can skip the coconut and sub regular oatmeal and add a couple tablespoons of milk, if needed.
I did a much smaller batch than usual for these. Ingredients: 1 and 1/8 c of all purpose flour, 1/2 tsp of baking soda, 1/4 tsp salt, 1 stick of unsalted butter (1/2 c) softened, 1/3 c of both white and brown sugar, 1 tsp vanilla extract, 1 egg, 1 and 1/4 c of semi sweet chocolate chips, 1 cup of coconut flakes, 1 c of sliced almonds.
Whisk together flour, baking soda and salt. Cream the butter and sugars in bowl with mixer. Add egg and vanilla, mix well. Gradually add your flour mixture and mix well. Stir in your coconut, almonds and chocolate chips. I use my Tablespoon to scoop dough. 1 1/2 to 2. Drop on cookie sheet. Bake on 350, 10-12 mins. Let cool for about 10 mins then transfer to cooling rack.

5 oz (140 g) Solid white albacore Tuna (1 Tin | In Water | Drained)
1 cup (185 g) jasmine rice
1 red onion (Thinly sliced)
1 Tbsp (15 g) olive oil
1 Tbsp (6 g) Curry Powder
3/4 cup (180 g) heavy whipping cream
2 Tbsp (20 g) sliced almonds (My personal addition)
Sel Gris Mill + Pepper Mill (Season to Taste)

Rice paper rolls recipe:
Preparation time: 10 minutes

Ingredients:
8 rice papers
100 grams of tuna
1/2 sweet pepper
A handful of olives
1/2 purple onion
1 stalk of spring onion
Pinch of salt
2 spoons of corn grains
Pinch of black pepper
Pinch of oregano
1 spoon of tahini
Instructions:
Chop bell peppers, spring onion, purple onion and olives.
Pour chopped ingredients, tuna, corn and tahini into a bowl.
Add oregano, salt and pepper.
Mix ingredients in the bowl.
Soften rice paper in water for 8-12 seconds and set on a dry towel.
Put a spoon of mixture on rice paper and fold.
Put rolls in a baking sheet.
Spread egg on rolls.
Spread sesame seeds.
Bake for 30 minutes.
Serve and enjoy!

Hydro – 2.3 grams
Dietary fiber – 0.5 grams
Protein – 3.6 grams
Fat – 2.6 grams
You can eat just a few of these as a small snack, or more if you're looking for more of a filling meal. You can also make a big batch of these and keep them in the refrigerator to eat over the span of a few days.
