Ingredients:
3/4 cup soy or rice milk
1/2 tsp apple cider vinegar
1 cup unsweetened applesauce
3 tbsp canola oil
1/2 cup brown sugar, packed
1 1/2 cups all purpose or whole wheat pastry flour
3/4 cup oat bran
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 tsp ground cardamom
1/2 tsp ground nutmeg
1/2 tsp salt
1/2 cup raisins or dried fruit of your choice

Apple Cinnamon Bran Muffins Recipe:
1 cup oat bran
1/2 cup flax meal
4 scoops apple cinnamon protein powder
2/3 cup apples, chopped
3/4 cup granulated Stevia
1 tsp cinnamon
1/4 tsp salt
1 tsp baking powder
4 jumbo egg whites
1 tsp maple extract
3/4 cup water
I tweaked the recipe slightly. Go with what is in the description.
Directions:
Mix the dry ingredients together in a large bowl. Then, add the egg whites, extract and water. Stir until mixed well. Scoop into a muffin pan coated with cooking spray. Bake at 350° F for 20 minutes.

Maybe it's an underwhelming twist, but I promise you that apples make this easy raisin bran muffins recipe pop with a bit of excitement. They are AWESOME RAISIN BRAN MUFFINS that you too will enjoy! These muffins are a result of our Aldi grocery haul recently. Aldi...what a store!
Ingredients:
1/4 cup vegetable oil
1 cup Greek yogurt
1 teaspoon ground cinnamon
1 egg
3/4 teaspoons baking soda
1/2 teaspoon salt
1 cup flour
1 cup raisin bran
1/3 cup sugar
1 apple
Mix ingredients into a large bowl.
Chop apple into small pieces, and include with your muffin mix.
Spoon into an oiled muffin tin.
Bake for 30 minutes at 350°F.
Serve immediately afterwards.

Chunky Banana Bran Muffins

Yield: 10 to 12 muffins
Ingredients
1 cup unprocessed wheat bran
1 cup buttermilk (shaken)
4 tablespoons unsalted butter, at room temperature
1/4 cup light brown sugar, lightly packed
2 extra-large eggs, at room temperature
6 tablespoons unsulphured molasses
1 teaspoon grated orange zest
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup raisins
1 cup large-diced bananas
1/2 cup chopped walnuts
Directions
Preheat the oven to 350 degrees F. Place paper liners into 1 (10 or 12-cup) muffin tin.
Combine the bran and buttermilk and set aside. Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, until light and fluffy. With the mixer on low, add the eggs, 1 at a time. Scrape the bowl and then add the molasses, orange zest, and vanilla. (The mixture will look curdled.) Add the bran/buttermilk mixture and combine.
In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low speed, slowly add the flour mixture to the batter just until combined. Don't overmix it! Fold in the raisins, bananas and walnuts with a rubber spatula.
With an ice cream scoop or large spoon, fill the muffin cups to the top and bake for 25 to 30 minutes, until a cake tester comes out clean.
