These oatmeal bars are healthy, vegan and easy to make. They are soft, chewy and light, packed with nuts, seeds, dried fruits and other nutrients. These baked oatmeal bars are perfect as post-workout snack or as a quick breakfast.

Makes 8 bars
Ingredients:
2 cups (180g) Rolled oats
1 teaspoon Baking powder
1/2 teaspoon cinnamon
1/4 teaspoon Salt
1/4 cup (35g) Dried cranberries
1/4 cup (35g) Sunflower seeds
1/4 cup (30g) slivered almonds
2 bananas, ripe
1¼ cups (300ml) Almond milk, or any milk of your choice
recipe for homemade almond milk:
3-4 tablespoons maple syrup or honey
2 tablespoons coconut oil
Directions:
1. Preheat oven to 350°F (175°C). Line an 8-inch (20cm) square baking pan with parchment paper, set aside.
2. In a large bowl, mash bananas, add honey and stir. Add milk, coconut oil and whisk to combine.
3. Combine wet and dry ingredients. Stir in almonds, cranberries and sunflower seeds.
4. Pour the batter into prepared baking dish.

APPLE BUTTER & RAISIN BARS | HEALTHY QUICK TEATIME SNACK

These delicious Apple Butter & Raisin bars are excellent for tea time, picnics, or potlucks. Make them vegan by replacing the egg with flaxseeds and the butter with vegan butter.
INGREDIENTS:
1.5 cups all-purpose flour
1 cup raisins or chopped walnuts (if using)
0.75 cup apple butter or sauce
0.5 cup butter (use vegan butter for vegan versions)
0.25 cup white sugar
1 egg
0.5 tsp. baking soda (bicarbonate of soda)
0.5 tsp. apple pie spice (cinnamon, nutmeg, cardamom, allspice)
For the icing:
1 cup confectioners’’ sugar
2 tbsp. milk (use plant-based milk for vegan recipes)
0.25 tsp. vanilla extract.
METHOD:
1. In a medium bowl and using a hand mixer, beat the butter until pale and fluffy
2. Add in the brown sugar, white sugar, apple butter, apple pie spice, and baking soda.
3. Beat this mixture again until well combined.
4. Add in the flour and beat well to combine.
5. Using a baking spatula, stir in the raisins or walnuts if using.
6. Pour this dough into a prepared glass or baking tin and spread out using a spatula to the corners of the tin.
7. Bake at 180C for 20-25 minutes
8. Meanwhile prepare the icing by mixing the confectioners’ sugar, milk, and vanilla extract or sugar.
9. Set aside.
10. Once the apple butter and raisin bars are done, remove from the oven and allow to cool.
11. Spreads the icing on the bars once cooled and serve!

Ingredients:
For the crumble:
1 cup (125g) All-purpose flour
1½ cups (135g) Rolled oats
1/2 cup (100g) Light brown sugar
1/2 teaspoon Baking soda
1/2 teaspoon Cinnamon *optional
1/4 teaspoon Salt
1/2 cup (115g) Butter, softened
For the raspberry filling:
300g (10.5oz) Raspberries, fresh or frozen
1 teaspoon Lemon zest
2 tablespoons (25g) Sugar
2 tablespoons (15g) Cornstarch
1 teaspoon Vanilla extract
Directions:
1. Preheat oven to 350F (175C). Line a 8-inch (20cm) square baking pan with a strip of parchment paper. Set aside.
2. Make the crumble: In a large bowl, combine oats, flour, salt, brown sugar and baking soda. Add the butter and mix until crumbly.
3. Make the filling: in a large bowl mix raspberries, lemon zest, sugar, cornstarch and vanilla extract. Set aside.
4. Press 2/3 of the crumble mixture into the bottom of the baking pan. Spread the filling over the base, Sprinkle the remaining oat mixture.
5. Bake for 35 minutes, until golden brown. Let cool completely, then refrigerate for at least one hour before cutting into squares.
