1 Cake mix; butter pecan 1/4 c Margarine; melted 1/4 c Water 2 c Miniature marshmallows 3/4 c Semisweet chocolate chips 1/2 c Coconut flakes Recipe by: bjs Preheat oven to 375. Mix cake mix, margarine and water until blended. Firm into greased 9x13 inch pan. Bake 15-18 minutes. Layer marshmallows, chocolate chips, and coconut over crust. Bake 2-3 minutes or until marshmallows begin to melt. Cool. Cut into bars. Makes 24 pieces. -----

One of my favorites is this smooth and creamy Chocolate Marshmallow Fudge, also known as Fantasy Fudge. This fudge is different than old fashioned chocolate fudge which is made from a mixture of sugar, butter, and cream that is cooked to the soft ball stage, cooled, and then beaten until creamy. This Chocolate Marshmallow Fudge simply involves boiling evaporated milk, butter, sugar, and marshmallow cream for just five minutes (a candy thermometer is not absolutely necessary) and then stirring in some dark chocolate, vanilla, and chopped nuts. So easy and so good. Perfect for gift giving.

Betty changes the decades-old Rice Krispies Treats recipe into kid-friendly Chocolate Marshmallow Cap'n Crunch Squares. The flavor is changed to chocolate also. These are chewy and crunchy--a real winner!

Chocolate Marshmallow Cap'n Crunch Squares
1/2 stick margarine 10.5 oz. bag of miniature marshmallows 1 cup milk chocolate chips 6 cups Cap'n Crunch cereal
Using a double boiler, melt 1 cup of milk chocolate chips. If you do not have a double boiler, use a sauce pan over low heat, and stir often. Melt 1/2 stick margarine in a large pot on the stove. Combine the melted margarine, melted chocolate, and the bag of marshmallows and cook over low heat, stirring until all ingredients are combined and smooth. Add 6 cups of Cap'n Crunch cereal and mix until all cereal is coated. Turn the mixture into a 13 inch by 9 inch by 2 inch pan (a Pyrex dish is perfect.). Cool to room temperature. (You may speed the cooling process by refrigerating for about 20 minutes.) When the mixture is cooled, cut into 24 squares (6 squares by 4 squares). Use a spatula to remove the individual squares from the dish onto a serving plate. You may stack them in layers, but expect them to be sticky--and oh, so good!
