• 3 to 5 pound pork shoulder or butt roast
• 2 tablespoons vegetable oil
• 2 teaspoons salt
• 2 teaspoons black pepper
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon paprika

• 2 large white onions cut into 2 inch chunks
• 1 pound baby carrots
• 1 pound baby red potatoes
• 2 cups apple juice
• 1 sprig fresh rosemary

1️⃣ Preheat oven to 450 degrees.
2️⃣ 00:00:17 - Rub oil onto pork roast. In a small bowl, stir together salt, pepper, garlic powder, onion powder, and paprika. Sprinkle seasoning mixture onto pork roast. Place fatty side up in a roasting pan or large cast iron dutch oven.
3️⃣ 00:01:37 - Roast, uncovered, in the 450 degree oven for 30 minutes. Reduce the oven temperature to 350 degrees and continue cooking an additional 1 hour.
4️⃣ 00:02:40 - Remove roast from oven and place the onion chunks, carrots, and potatoes around the meat. Pour apple juice on vegetables. Season vegetables with salt and pepper. Place rosemary sprig on top.
5️⃣ 00:03:11 - Cook an additional 1 to 1 1/2 hours, or until vegetables are tender and meat shreds easily with a fork. Season vegetables with additional salt and pepper to taste and serve hot.

One Pan Apple Cider Chicken in 30 Minutes
Our one pan apple cider chicken is simple and delicious. The great thing is, it can be made up in 30 minutes. In light of this, it makes it a fantastic midweek meal. Made with a simple combination of boneless, skinless chicken breasts, rosemary, salt, pepper, apples, and sweet apple cider mixed with dijon mustard, the outcome produces a taste to die for. Your family, friends, and anybody you serve it to, will rant and rave about it and ask for the recipe. Please don't tell them you made it in one pan in 30 minutes. They won't believe you.
As always, you can change a few things in the recipe. For example, you can use a different cut of chicken. If you do, remember to adjust the cooking time accordingly. The same goes with the apples. I like honey crisp, but you can use another apple if you wish.

Ingredients:
1 pound or 1/2 kilo of stewing beef or chuck
3 boneless, skinless chicken breast cut in half
3 honey crisp apples or the apple of your choice, cored
1 tbsp of dried or fresh rosemary
1/2 cup of sweet apple cider
2 tsp of dijon mustard
Method:
Core the apples and place them in a bowl of water with a squeeze of lime to stop them from turning brown.
Season the chicken with salt and pepper on both sides.
Add about 2 tsp of oil to a pan over medium high heat. Place the chicken in and fry it for about 4 or 5 minutes on each side until it is browned and no longer pink inside.Set them aside on a plate.
Add a couple more teaspoons of oil to the pan, place the apples in and fry until tender crisp and browned.
Season the apples with the rosemary, stir and cook for another minute or two.
In a mixing cup or small bowl, make the sauce by combining the apple cider with the dijon mustard. Stir well.
After the apples are tender crisp, add the chicken back in and slowly pour the sauce over. Place a lid on, reduce the heat, and allow it to simmer for another 4 or 5 minutes.
Plate, serve, and enjoy your apple cider chicken.

• 1 (2 to 3 pound) pork loin trimmed and tied
• 1 ½ teaspoons salt
• 1/2 teaspoon black pepper

1️⃣ 00:00:31 - Preheat oven to 375 degrees. Season the pork loin with salt and pepper.
2️⃣ 00:00:44 - Heat the olive oil in a heavy, oven-safe skillet over medium-high heat. Sear the loin in the skillet until all sides are browned, about 2 to 3 minutes per side.
3️⃣ 00:01:14 - In a small bowl, whisk together dijon mustard and apple cider vinegar. Brush over pork roast.

Pork Pot Roast with Cider & Apples from Real Life Recipes
This one-pot pork roast made with cider and apples is a real celebration of the West Country. Mustard adds a subtle warmth and honey lends a little sweetness. It’s a stress-free way of cooking that’s like a casserole, but with the meat in one piece.

Recipe
Ingredients (Serves 4-6):
1.8kg rolled pork shoulder joint, skin scored
2 tbsp olive oil
3 onions, finely sliced
4 garlic cloves, finely sliced
3 tbsp plain flour
400ml cider
400ml chicken stock
A small bunch of thyme (tied with string)
12 sage leaves 2 bay leaves
4 Granny Smiths (or other crisp, tart eating apples)
1 tbsp wholegrain mustard 1 tsp honey
Salt and freshly ground black pepper
Method:
1. Preheat the oven to 190°C/Fan 170°C/Gas 5. Season the pork on all sides with salt and pepper, rubbing a little extra salt into the scored lines of the skin.
2. Heat the olive oil in a large non-stick casserole pan over a medium heat. Add the pork to the pan, skin side down, and colour well on all sides – the skin should be nicely crispy and browned. Lift the pork out onto a plate and set aside.
3. Add the onions to the pan and sauté for 2 minutes, then toss in the garlic and cook for another 2 minutes. Stir in the flour and cook, stirring, for another couple of minutes. Add half of the cider and chicken stock along with the herbs and stir well.
4. Bring the liquor to a gentle simmer and then return the pork to the pan. Put the lid on and place on the middle shelf of the oven to cook for 2 hours.
5. Just before the 2 hours’ cooking is up, peel, quarter and core the apples. Take the pan from the oven and remove the lid. Add the apples and mustard then stir in the remaining cider and stock. Return the uncovered pan to the oven and cook for another 30 minutes.
6. Remove the pan from the oven and transfer the pork to a warmed serving platter. Leave to rest for 10 minutes before carving. Stir the honey through the sauce then taste for seasoning and adjust as necessary.
7. Carve the meat into slices and break the crackling into pieces. Serve with some apple and cider sauce and sautéed tenderstem broccoli or other green veg.
