How To make Apple Oat Peanut Butter Cookies
1 c All-purpose flour
1 c Whole wheat flour
2 ts Baking soda
3/4 c Reduced fat creamy peanut
-butter 1/4 c Butter or margarine
3/4 c Granulated sugar
3/4 c Brown sugar, packed
1/2 c Frozen egg substitute;
-thawed
or 1 egg and 2 egg whites :
slightly beaten 1 ts Vanilla extract
1 c Rolled oats; quick-cooking
1 md Apple; finely chopped
Recipe by: Midwest Living, April 1995 Preheat oven to 375 degrees. In a mixing bowl, combine the flours and baking soda; set aside. In a larger bowl, beat the peanut butter and butter with an electric mixer on medium speed for about 30 seconds. Add the sugars; beat until fluffy. Add the egg product and vanilla extract; beat until mixed. Beat or stir in the flour mixture. Stir in the oats and chopped apple. Shape the dough int 1 1/2-inch balls; place 2 inches apart on ungreased cookie sheets. Flatten the dough slightly with the tines of a fork. Bake for 10 to 12 minutes, or until the edges of the cookies are firm. Remove the cookies to cool on a wire rack. Penny Halsey (ATBN65B). 2/3 cup sweet potato puree
1/4 cup coconut oil liquid but not hot
1/4 cup maple syrup
2 eggs
1 cup old-fashioned rolled oats
3/4 cup old-fashioned rolled oats made into oat flour
1/2 cup dried cranberries
1/2 cup chopped pecans
1/4 cup ground flaxseed
1/2 tsp cardamom
1/4 tsp sea salt
Midnight Cookies 4:11
3/4 cups old fashioned rolled oats made into oat flour
1 cup old fashioned rolled oats
1/2 cup chopped cashews
1/2 cup sesame seeds
1/4 tsp sea salt
1/2 tsp cinnamon
1/8 tsp cardamom
1/4 tsp ground ginger
1/2 cup pitted dates if hard then soaked in hot water for 5 minutes and then drained
1 egg
1/4 cup coconut oil melted
1/2 cup unsweetened apple sauce
1-2 Tbsp honey

HEALTHY OATMEAL BARS RECIPE
Ingredients:
1.5 cups ground oats (or oat flour) (150g)
1 cup old-fashioned oats (or quick oats) (90g)
2 tsp baking powder
2 tsp cinnamon
1 cup applesauce (255g)
1/2 cup honey (170g)
1/3 cup peanut butter (smooth or crunchy) (85g)
1 cup grated apples (150g)
1 apple, peeled and sliced
Preparation:
In a large bowl, combine dry ingredients, ground oats, old-fashioned oats, baking powder and cinnamon.
In another bowl, add your applesauce, honey and melted peanut butter. Stir in the grated apples.
Pour dry ingredients into the wet ingredients, mixing together to combine. Do not over mix the batter.
In a lined baking pan spread 2/3 of the oat mixture. Press well using the back of the spoon.
Layer the sliced apples over the oats and spread evenly.
Spoon the remaining oat mixture over the apples, lightly pushing into the top.
Bake at 350F (180C) degrees for 20-25 minutes, depending on how crunchy you like your apples. Let it cool for 15 minutes.
Cut in squares or bars.

Hi friends, let's whip together an easy, tasty treat with only TWO ingredients! Applesauce and oatmeal! Super-duper easy go-to for a healthy snack or dessert. You can always add a few more ingredients to make it a bit sweeter or healthier. I made two batches and did just the two ingredients and also made one with dried cranberries and chia seeds. Recipe: Yield 6-8 cookies
1 C Oats
1/2 C regular applesauce or 3/4 C applesauce if chunky
Added to 2nd batch:
2 T Dried cranberries
1 tsp Chia seeds
Preheat oven to 350 degrees. Mix ingredients well. On a greased baking sheet or parchment paper, squeeze and roll into 2-inch balls, and flatten with your hands or a spatula. Chill in the fridge for 20 minutes to keep the shape. Bake 20-30 minutes (depending on thickness) until toasty edges. Let cool completely. Seal in an airtight container in the fridge for up to 2 weeks or freeze for longer term.
