1 c Finely chopped cookg apples
1 ts Lemon juice
1/4 c Grated cheddar cheese
1 tb Minced fresh chives
4 Phyllo dough sheets
1 1/2 tb Melted butter

In a small bowl, combine apples, lemon juice, cheddar cheese, and chives. Set aside. Preheat oven to 375' F. Cut each sheet of phyllo in half lengthwise and into fourths crosswise, forming 32 6 x 4-inch squares. Lay 1 square of phyllo on a sheet of waxed paper. Brush lightly with melted butter. Repeat with 2 more squares of phyllo. Place 2 tablespoons of filling in center. Bring up opposite corners of square and pinch to form a "kiss". Repeat with remaining phyllo. (You should have 8 filled pastries) Transfer to lightly buttered baking sheet. Bake for 15 to 20 minutes, or until golden brown. Serve warm. FIG BAKLAVA TWISTS
INGREDIENTS
1/2 stick butter
1/4 cup chopped pecans
1/4 cup whole walnuts
1 package phyllo dough (cut into 6” squares)
Homemade or previously prepared fig preserves
DIRECTIONS
Melt 1/2 stick butter and pour into a serving dish
1/4 cup chopped pecans
1/4 cup whole walnuts
6” square of phyllo dough
1. Slightly brush butter on to a cutting board
2. Gather 3 slices of phyllo dough and place on the board
3. Brush the sheets with more butter
4. Drop a teaspoon of fig preserves to into center
5. Top with pecans and walnuts
6. Gather dough into a packet, fold and twist the dough over the fig preserves
7. Squeeze to close, then twist
8. Place on a non- buttered baking dish and bake at 400 degrees for 8-10 minutes until browned (watch carefully)
9. Remove, let cool then place on a serving dish

Cheesy Phyllo Rolls

Ingredients
about 6 oz salted butter, melted
1 pound (#4) phyllo, thawed and at room temp.
The Cheese filling:
8oz (350g) feta cheese
8oz (200g) shredded mozzarella cheese
8 oz (230g) cream cheese at room temp.
1 teaspoon finely chopped mint
1 teaspoon dried crushed oregano
freshly cracked black pepper, to taste
Instructions
Preheat the oven to 350 °F, 180 °C.
Line 2 baking trays with parchment paper and set aside.
Make the Cheese Filling:
Combine all of the filling ingredients together in a bowl and mix until incorporated.
Assemble the Rolls:
Take one sheet of phyllo, drizzle some melted butter over top. Fold it in half lengthwise. Place a tablespoon of the cheese filling at the bottom of the pastry, keeping it centered.
Fold over both sides (right and left long sides) of the phyllo over the filling.
Drizzle with some more melted butter.
Roll the pastry all the way up. Place on the prepared baking tray.
Keep doing this until all of the phyllo and/or cheese filling are finished.
Brush the tops of the rolls with melted butter and pierce using a fork so that the steam escapes during baking.
Bake on the center rack of the preheated oven until golden and crisp. 35-40 minutes.

Notes
Freezer Instructions: Assemble the pastries and chill in the freezer until firm. Either transfer the frozen rolls to a freezer-safe bag or wrap the tray in plastic wrap and keep frozen up to 3 months. Bake frozen at 350 °F until golden and crisp.

- 6 cups ( 900g) all purpose flour
- 1.5 cups (372g) hot water
- 2 teaspoons (23g) white vinegar
- 1 tablespoon (10g) olive oil
- juice of 1 lemon
Turkish (pistachio):
- 2.5 cups (350g) shelled raw pistachios
- 1/2 teaspoon (4g) fine sea salt
- 2 cups (454g) unsalted butter
- 1 pound (25 pieces) phyllo dough (buy 4 packages of filo also called phyllo pastry to use)
- 2.5 cups (470g) granulated sugar
- 1/2 cup (96g) muscovado sugar
- juice of 1/2 lemon
- 1 3/4 cup water (415ml)
- 1inch peel of lemon zest
Greek (spiced walnut):
- 25 sheets filo
- 2 3/4 cup (246g)walnuts
- 1/2 tsp (4g) fine sea salt
