Athens Raspberry Chocolate Phyllo Delights Recipe
DESCRIPTION:

INGREDIENTS:
1 cup heavy cream
8 ounces 60% cacao bittersweet chocolate
6 tablespoons seedless raspberry spreadable fruit
2 packages (15 count, each) Athens Mini Fillo Shells
15 raspberries, halved
2 tablespoon confectioners’ sugar, optional for garnish
DIRECTIONS:
Heat heavy cream in a small saucepan over medium-low heat until it just starts to bubble. Break chocolate into pieces and place in a medium-sized bowl. Pour heavy cream over the chocolate and let it sit for about 5 minutes, stirring occasionally to blend chocolate as it melts. Stir in the raspberry spreadable fruit.
Chill for about a half-hour or until slightly thickened.
Spoon or pipe 1 tablespoon of filling into each shell. Garnish with raspberry half and a sprinkle of confectioners’ sugar, if desired.
TIPS:
For added crispness, preheat oven to 350⁰F. Place empty shells on a baking sheet and bake for 3-5 minutes. Cool and fill.

Ingredients:
8-12 phyllo sheets
80-90g chocolate chip cookie dough, thawed.
About 1/4 cup (4 tbsp) melted butter
Sea salt optional
To serve:
Nutella
Chocolate sauce
Vanilla ice cream
Directions:
Preheat the oven to 360 F.
Cut each phyllo sheet into 2.
Place two cut sheets over each other. Brush the top layer with melted butter.
Roll cookie dough into a thin log, 1 inch shorter than the width of the sheet.
Fold the two longer sides over the cookie dough then roll into a cylinder.
Brush with melted butter to seal the edges as you roll. This will keep them from opening up.
Place the rolled cigars on a baking tray. Brush each with more melted butter.
If you like sprinkle some sea salt over the cigar. Optional.
Bake for about 15-18 minutes until lightly golden.
Cool for 5 minutes. Serve with Nutella and chocolate sauce. It pairs excellently with vanilla ice cream.
How to Layer Phyllo Dough

Now we're going to use the fillo dough. This comes frozen. You'll thaw it overnight in the fridge, and it's a twin pack, so you'll use as much as you need, and you keep the rest for the next recipe. It stays in the fridge for up to three weeks, so you can use it as often as you need. Okay, so we're going to unroll this. This is a great product to use. No trans fats, no saturated fats, and I love this because when you bake it, it looks like you spent a lot of time on it. You really don't.
I'm going to show you a couple of ways to do this. The first one is the old-fashioned way. We're using the butter. We're going to brush the outsides first, and using as many sheets as the recipe calls for, we'll just do it again. Okay, that's one way of doing it. Now I'm going to show you how we do it in the restaurant. It's a shortcut, and it's very easy to use, and it's called cooking spray. Same preparation, it's a lot faster though, and it saves you time. You can use either one of these in a recipe.

Clean Eats - Chocolate Phyllo Bar
Recipe:
4 large sheets of organic phyllo dough
1/4 cup unsalted organic grass-fed butter or ghee, melted
1 large dark chocolate bar
1/2 cup hazelnuts, divided
Directions:
Preheat oven to 375.
Place 1 sheet of phyllo dough on the bottom of a pan, using a pastry brush, brush with melted butter. Continue with all 4 layers of dough. Place chocolate bar in the middle. Sprinkle hazelnuts. Wrap the phyllo around the chocolate bar until it is sealed. Butter all around the phyllo dough. Sprinkle more hazelnuts, and a little sea salt on top! Bake for 15 minute or until golden brown!
