1 1/2 lb Baking apples; peeled sliced
6 cups)
3/4 c Water
3/4 c Granulated sugar
2 tb Margarine; -=or=-
2 tb Butter
1 ts To 2 ts ground red new; mexi
1 1/2 ts Ground cinnamon
1/2 ts Ground nutmeg
1/4 ts Salt; optional
Double 9" pie crust In a large pot combine apples, water, sugar, margarine, chili powder, cinnamon, nutmeg and salt. Cook over medium heat, stirring occasionally, 20-25 minutes or until apples are slightly tender and juice thickens. Pour
into bowl and cool 5 minutes. Pour into unbaked pie crust; cover with top crust and cut vents, or make lettice top with strips of crust. Sprinkle with sugar. Bake in preheated 375 degrees oven 30-40 minutes or until golden brown. Cool and serve. This Upside Down Pecan Apple Pie is way over the top delicious. If you love apple pie, then you’re gonna love this one, the soft plump pieces of apple with the combination of crunchy pecans will have you begging for more. We always have friends or neighbors stopping by to say hello, and this pie is one dessert that I bake often, it’s delicious and beautiful and everybody loves it. Whether I top a slice with a scoop of ice cream or just serve it alone with hot coffee it is always delicious. I make my own homemade pie crust since it is so easy to prepare and it’s made with ingredients I always have, but store bought pie crust works real well too. Cooking my apples first before baking my pie is the trick to this delicious pie, you can’t beat the pillow soft pieces of apple when prepared this way, it’ll never be dry and every minute you put into it will be worth it. Don’t want to fry them? No problem, brush each empanada with olive oil and bake for 20-22 minutes at 400 degrees
Refrigerate for at least one hour
Ingredients: 20-22 empanadas
Empanada dough
3 3/4 c AP flour
12 tbsp cold butter
1 tbsp sugar
Salt I’m using 1 1/2 tsp
Ground Beef Stuffing:
2 lbs lean ground beef
2 small bell peppers (chopped)
1 Anaheim pepper (chopped)
1 small onion (chopped)
4 minced garlic cloves
2 tsp Mexican oregano
2 tsp thyme
2 tsp parsley
2 tsp basil
2 tsp paprika
1-2 tsp crushed red pepper
1 tsp garlic powder
1 tsp black pepper
Salt I’m using 2 tsp
???? your favorite melting cheese, I’m using medium cheddar, Monterey Jack and Oaxaca cheese

CHILI PIE VEGAN RECIPE | Richard in the kitchen
In this video I show y'all how make vegetarian Frito chili pie. This chili pie vegan recipe is made with leftover vegan chili and comes together in no time at all. Completely vegan friendly with a homemade vegan version of Cheez Whiz recipe and Original Frito corn chips. Super easy! Super delicious!
Shopping List:
Leftover vegan chili (for how to make my version refer to this link
Original Frito Corn Chips (make sure they are original. The other flavored chips are not vegan)
Red onion
Diced tomatoes
Cilantro
Vegan Cheez Whiz:
1 cup almonds
1 roasted red pepper
1 tbsp. lemon juice
2 tbsp. red wine vinegar
2 tbsp. butter flavored coconut oil
2 tbsp. yeast
1 clove garlic or 1/4 tsp garlic powder
1 tsp. Dijon mustard
2 tsp salt
1/4 tsp. white pepper
1 tbsp. maple syrup
Directions:
First you have to soak the almonds. If you're in a hurry you can soak them in boiling water for 15 minutes or in water for 1 hour. The best is to soak overnight.
Blend all of the cheese ingredients in a blender until smooth. If it's too thick just add small increments of water until you get the desired consistency. Set aside.
In a casserole dish or cast iron skillet, layer the chili, Fritos, red onions and vegan Cheez Whiz. The amount of layers depends on how deep your dish is.
Bake in the oven on 350 for 20-25 minutes.
When done, top with more Frito corn chips, vegan cheese and garnish with diced tomatoes and cilantro.
