How To make Asparagus and Crabmeat Salad
1 c Mayonnaise
1 tb Lemon juice - fresh
1 1/2 ts Tomato paste
1 1/2 ts Shallot - minced
1/2 ts Dijon mustard
1/4 ts Pepper
1 lb Asparagus - trimmed
8 oz Crabmeat - cooked
4 lg Boston lettuce leaves - or
-butter lettuce leaves Calories per serving: Number of Servings: 4 Fat grams per serving: Approx. Cook Time: Cholesterol per serving: Marks: *DIRECTIONS* Whisk mayonnaise, lemon juice, tomato paste, shallot, Dijon mustard and pepper in medium bowl. Cover and refrigerate until ready to use. (Can be prepared 3 days ahead.) Cook asparagus in large pot of boiling salted water until crisp-tender, about 4 minutes. Transfer to bowl of ice water and cool. Drain and pat dry. mix crabmeat into mayonnaise. Season to taste with salt. Arrange 1 lettuce leaf on each plate. Top with asparagus. Spoon crabmeat mayonnaise over and serve. CRABMEAT AND ASPARAGUS QUICHE WITH MIKEY'S ORIGINAL OLD WEST TRAIL DUST
This is a really an easy quiche to make, and is great for brunch or dinner.
1 Pie crust (I used frozen crust & followed their directions and make sure to prick the crust all over with a fork)
4 to 5 large Eggs
¾ Cup canned milk
3 Tablespoons Whiskey or dry sherry
1 Cup or a can of crabmeat that has all the liquid squeezed out. You can also use canned salmon
¼ Cup Mozzarella or Gruyere cheese
10 to 12 pieces of Asparagus lightly cooked (put asparagus in covered steamer bring water to boil and turn off and remove from heat, it will continue to cook)
Mikey's Original Old West Trail Dust used liberally
Bake pie crust for 9 to 10 minutes at 400 degrees till slightly browned. While crust is still warm sprinkle on the cheese. Whisk the eggs, milk and whiskey together for a minute or so. Add the asparagus and crabmeat to the pie crust and then sprinkle on a generous amount of Mikey's Original Old West Trail Dust. Then add in the egg and milk mixture and sprinkle again a generous amount of Mikey's Original Old West Trail Dust. Bake in a pre-heated 350 degree oven for 40 to 50 minutes till a knife comes out clean when inserted about 1 inch from the edge (the center should be set, but still soft) the residual heat in the quiche will finish cooking the custard. Make sure to eat while still really hot, as the crust will become soft if allowed to sit. Have your salad or side dishes ready before taking the quiche out of the oven.
I always have a bottle of Mikey's Original Old West Trail Dust on the table to be used as you would salt and pepper.

Prawn & Asparagus salad - سالاد میگوومارچوبه
This is a quick and easy prawns & salad perfect for lunch/dinner! Prawns cooked in butter for 3/4 minutes with the addition of chilli flakes infused in olive oil & saffron ( i have used chef Mojdeh’s special, lettuce, avocado, asparagus and pickled radishes! The addition of sesame oil and capers in my cocktail sauce gives it a very nice flavour which goes really well with the salad/prawns.
Ingredients for 1 person:
-Prawns
-Asparagus
-Lettuce
-Avocado
-Pickled radishes

- tsp of each to make the Sauce: Garlic mayo, sesame oil, ketchup, Dijon mustard, capers, balsamic vinegar, salt and pepper
من وقتی میخوام یک ناهار یا شام در ۱۰ دقیقه درست کنم از میگو به عنوان پروتیین استفاده میکنم. چون فقط
سه/چهار دقیقه نیاز به پخت داره و سریع آماده میشه. من به این میگوها از فلفل معروف بقل گاز شف مژده اضافه کردم تا هم کمی اسپایسیاش کنه و هم بخاطر زعفرون عطر و رنگ خوبی به میگو ها بده.
همچنین من همیشه این سس کوکتل رو برای میگو درست میکنم چون ترکیبشون با هم خیلی خوب میشه. اگر ترشی تربچه نداشتید میتونید از پیاز ترشی خرد شده استفاده کنید. اگر دسترسی به مارچوبه تازه داشتید بهتره چون میتونید کمی گریلاش کنید. در غیر اینصورت اگر مارچوبه ها در آب نمک بود و کمی شور دیگر نیازی به ترشی نیست.
