2 Large avocados 2 c Chicken broth Salt, pepper 2 c Whipping cream 2 T Cognac 2 T Sherry Frozen avocado shell cups Peel avocados and dice pulp. Puree pulp in blender container with chicken broth. Season to taste with salt and pepper. Gradually stir in whipping cream. Chill. Add cognac and sherry just before serving. Note: To make frozen avocado-shell cups for soup, cut a slice from stem end of avocado. Scoop out pulp and discard seed. Reserve cap. Use pulp for soup or puree with small amount of lemon juice and freeze for future use. Place shell upright in cup or egg carton. freeze until firm. To serve, embed avocado shell in crushed ice in a dessert dish or soup icer. Carefully spoon in soup and lean cap against side of avocado. Makes about 4 cups.

This Cold Cucumber Avocado Soup makes a delicious and creamy Summer Soup! Cucumbers are one of my favorite non sweet fruits and right now I eat them every day in Salads or as part of my juIces. I have just planted many in my garden, they are sill baby plants but I can get organic cucumbers from a nearby farm. Also Avocado Season has started and these two combined make a tasty and nourishing soup! When chilled before serving it will cool you down and also hydrate your body with the high living water content in Cucumbers! I like to add many fresh and fragrant herbs from my garden for flavor and you can choose your own, using seasonal herbs. And to top the soup with crunchy garlic basil crumbs makes it even better! Cold Cucumber Avocado Soup is so easy and fast to make and it is a great starter for hot summer days!
Ingredients ----------------------- Avocado - 1 ( scoop out the flesh) Olive oil - 1/2 tsp Chopped garlic - 2 Chopped spring onion or chopped onions -2tbsp Salt & Pepper to taste Milk-1 cup Vegetable stock-2 cups Crushed basil - 1/2 tsp (optional)
Method --------------- Heat oil in a pan fry garlic,basil & spring onion till raw smell has disappeared. Cool and blend this along with avocado to a smooth paste. Heat milk,stock,salt and pepper till hot and switch off the stove. Dilute the blended mixture into the milk and stir well. Just before serving drizzle some olive oil and serve hot.
Note: ---------- If serving for kids sprinkle some cheese & serve it hot.
