How To make Baked Potato with Curried Mushrooms.
1 6 oz 180 g potato scrubbed.
1 ts Margarine.
1 Shallot or small onion
Chopped 2 oz 60 g mushrooms wiped and
Sliced 1 ts Mild curry powder.
1 ts Tomato puree.
1 tb Low fat natural yogurt.
1 ts Fresh mint or half tsp dried
(optional) Salt and pepper. Sprig of fresh mint to Garnish 1. Preheat the oven to 200 c 400 f gas mark 6.
2. Bake the potato in the oven for about 1 hour until cooked:
(alternatively microwave on high for approximately 6 minutes). 3. Meanwhile heat the margarine in a small saucepan and saute with shallots
or onion for about 5 minutes until softened. Add the mushrooms and cook for 2 more minutes. Add the curry powder and stir well.
4. Blend the tomato puree and yoghurt. Add the chopped mint if using, and
season with salt and pepper. Stir into the mushroom mixture and heat gently for one to two minutes stirring constantly. 5. Split the baked potato and fill with the curried mushroom mixture.
Garnish with a sprig of mint. Preparation 10 minutes: cooking 1 hour (10 minutes if microwaved).

Ingredients:
▢1 baking potato - about 280g/10oz in weight.
▢1 tsp beef dripping - melted (swap for sunflower oil for vegetarian)
▢1/4 tsp salt
▢1/4 tsp black pepper
Process:
1. Preheat the oven to 220C/425F.
2. Prick the potato several times with a fork.
3. Place on a plate and microwave on high for 5 minutes.
4. Remove from the microwave and brush the beef dripping (or oil) all over the skin of the potato.
5. Roll the potato in the salt and pepper to coat.
6. Place on a shallow baking tray, in the oven for 55 minutes.

I know vegetables can be boring, but these are incredibly easy and delicious perfect to accompany any protein. The best part is that you can mix and match your veggies and use your favourite ones. Some more options could be bell peppers, asparagus, cauliflower, Brussel sprouts, or anything your heart desires. Feel free to use any oil of choice and as much as you like according to your lifestyle. There is no specific measurements as you can use as much vegetables as you like or enough to fit the sheet pan rows. You will need:
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
baby potatoes quartered
1/2 an onion quartered
1 zucchini cut into circles
1-1.5 cups broccoli florets
3/4 cup organic baby carrots
1 cup mushrooms
1-2 tablespoons avocado or olive oil
salt, pepper, dry oregano to taste

Please note: Feel free to use any vegetables you love. You can use any oil but I like olive oil or avocado oil. If you want a more nutty but flavour you are also more than welcome to add some grated Parm as well.

Line a baking sheet with parchment paper so that we can have a mess free side dish. Cut all of your vegetables into equal pieces and arrange each vegetable into individual rows. Sprinkle with salt pepper and dry oregano and the oil. Massage each row and roast in a pre-heated 425F oven for 25-30 minutes or until soft roasted and caramelized. Enjoy and follow for more.

✅ Ingredients:
• potato, small preferable – 2,6 lb | 1200 g
• button mushrooms – 18 oz | 500 g
• vegetable oil – 3 tbsp
• cream 20-30% - 1 cup | 250 ml
• garlic – 6 cloves
• chicken broth – 1 cup | 250 ml
• thyme – 2 sprigs
• salt – to taste
• ground black pepper – to taste
✅ You will need:
• stockpot
• pan
• carving board
????Preparation:
1. Wash the potato thoroughly, cut large ones into medium pieces, leave small ones uncut, pour with water and cook over low heat for 15-20 minutes until readiness.
2. Heat a pan with the vegetable oil, add the minced garlic and halved mushrooms and simmer over low heat for 5 minutes.
3. Add the chicken broth, stir, cover with a lid and simmer for 5 minutes over low heat, then remove the lid, stir and keep simmering for another 5 minutes.
4. Drain the cooked potato and add into the pan with mushrooms.
5. Add the cream, salt and pepper to taste and stir well, simmer for 2 minutes over low heat.
6. Switch the heat off and sprinkle the creamy potato and mushrooms with fresh thyme and serve to the table.
