Kerala style crab roast is a delicious and flavourful dish that originates from the state of Kerala in India. It is made with fresh crabs that are cooked in a mixture of spices, including chilli powder, turmeric, coriander, and ginger-garlic paste, and then roasted to perfection. The resulting dish is savoury, spicy, and bursting with flavour, making it a popular choice among seafood lovers. Crab roast can be served as a main course for lunch or dinner, and is often accompanied by steamed rice or crusty bread. It is a popular dish in coastal regions. Enjoy the recipe!
???? SERVES: 4-5 People
???? INGREDIENTS
Crab (ഞണ്ട്) - 650 gm (after cleaning)
Coconut Oil (വെളിച്ചെണ്ണ) - 4 Tablespoons (60 ml)
Mustard Seeds (കടുക്) - ½ Teaspoon
Ginger (ഇഞ്ചി) - 1 Inch Piece (Crushed)
Garlic (വെളുത്തുള്ളി) - 8 Cloves (Crushed)
Green Chilli (പച്ചമുളക്) - 2 Nos (Chopped)
Curry Leaves (കറിവേപ്പില) - 3 Sprigs
Onion (സവോള) - 4 Nos (500 gm) - Sliced
Shallots (ചെറിയ ഉള്ളി) - 15 Nos (Sliced)
Salt (ഉപ്പ്) - 1½ Teaspoon
Turmeric Powder (മഞ്ഞള്പൊടി) - ¼ Teaspoon
Chilli Powder (മുളകുപൊടി) - 1¼ Tablespoon
Coriander Powder (മല്ലിപ്പൊടി) - 1¼ Tablespoon
Garam Masala (ഗരം മസാല) - 1 Teaspoon
Tomato (തക്കാളി) - 1 No (Chopped)
Lime / Lemon Juice (നാരങ്ങാനീര്) - 1 Teaspoon
Hot Water (ചൂടുവെള്ളം) - ½ Cup (125 ml)
Black Pepper Powder (കുരുമുളകുപൊടി) - 1 Teaspoon

Crab Curry | Perima's Kitchen Recipe!
An authentic spicy crab curry has to be full of flavor with an abundance of mouth watering gravy. The crab meat is sweet and if prepared correctly the flavor of the gravy will infuse into the meat enhancing the deliciousness of the delectable and succulent crab meat.
Preparation of the crab:
2kgs crab ( XL Crab) Please ask your fish monger to cut and clean the crab and very importantly, to give the crab a bit of a bash, so the cracked shells allow the gravy to seep into the crab meat. Give your crab a thorough wash to remove any small pieces of shell.
Ingredients:
2 kgs Crab (Large or XL)
Half a cup of oil
2 tsp Mustard seeds
2 tsp Methi seeds
2 tsp of Crushed ginger & garlic
2tsp of Cumin/Jeera powder or roasted jeera seeds
2 Large onions
6 Green chillies
2 Stems of curry leaves
7 tbs of Masala (I used Nagiah's EveryDay Masala, Extra Hot. Alternatively, use a mix of 3 tbs Masala and 2 tbs chilli powder and dry spices).
8 large Tomatoes
2 to 3 tbs of Tamarind
1 bunch of Fresh dhania (coriander)
Cloves of garlic
Salt
Perima’s top tip: in a separate pot heat up some oil, fry fresh curry leaves ???? & then add 1.5 tsp of Kashmiri chilli powder. Drizzle all over the curry, simmer for 5mins & then garnish with fresh coriander.

Today's recipe is Crab Curry. Crab Curry is one of the seafood delicacies which we enjoy at restaurants. Even though everyone falls in love with the taste of the crab, they often shy away in trying to cook the recipe. But cooking the crab is one of the easiest tasks because the crab meat already has a lot of flavor and so it doesn't take much effort to make the gravy taste wonderful. This crab masala is made in Bengali Style.Serve the Crab Curry hot with some steamed rice.

INGREDIENTS :
Crab – 1 kg.
Garlic paste – 1 tsp.
Ginger paste – ½ tsp.
Red chilli powder – ½ tsp.
Turmeric powder – ½ tsp.
Salt – 1 tsp.
Mustard oil – 1 tbsp.
Mustard oil – ¼ cup.
Bay leaf – 2.
Cinnamon sticks – 1.
Cardamom – 4.
Cloves – 4.
Finely chopped onion – 2 large size.
Garlic paste – 1 tsp.
Ginger paste – ½ tsp.
Chopped tomato – 2.
Salt to taste.
Sugar – 1 tsp.
Turmeric powder – ½ tsp.
Coriander powder – 2 tsp.
Cumin powder – 2 tsp.
Red chilli powder – ½ tsp.
Kashmiri red chilli powder – 1 tsp.
Slited Green chilli - 4
Garam masala powder – ½ tsp.
Black pepper powder – ½ tsp.

5 snow crab legs
1 teaspoon onion powder
1 teaspoon old Bay seasoning
1 teaspoon creole seasoning
1 teaspoon paprika
1/2 teaspoon ground black pepper
2 tablespoon hot sauce
1/2 cup chicken broth
1 tablespoon lemon juice
5 garlic cloves minced
1/3 of a small onion chopped
16 ounce unsalted butter
