1 md Onion, finely chopped
3/4 c Finely chopped green pepper
3 oz Can sliced mushrooms,
Broiled-in-butter, undrained 1 c Herb seasoned dressing
6 oz Pk frozen king crabmeat,
-defrosted 3/4 c Chicken broth or clam juice
4 (8-ounce) whole trout
1. Lightly grease a shallow, heat-resistant, non-metallic baking
dish and set aside. 2. In a medium-sized heat-resistant, non-metallic bowl heat butter in
Microwave Oven 30 seconds or until melted. Add chopped onion and green pepper. Heat, uncovered, in Microwave Oven 3 minutes or until onion and pepper are tender. 3. Add mushrooms, seasoned dressing and crabmeat. Toss to gently combine.
4. Add chicken broth or clam juice and stir to combine. Stuff
each fish with some of the mixture. 5. Secure openings with string,toothpicks or small metal skewers.
6. place stuffed fish in prepared baking dish. Heat, covered with clear
plastic wrap, 10 minutes or until fish flakes easily with a fork. Let fish stand, covered, at room temperature 2 minutes to finish cooking.

INGREDIENTS ⬇️ ⬇️ ⬇️ ⬇️
4 or more fresh Okra
2 - 3 stalks scallion
Bell peppers
2 or more garlic cloves
1/2 of a green Scotch bonnet
Pepper (no seeds)
Fresh thyme
Unsalted butter
1 - 2 cups fresh callaloo, diced
All-purpose/fish seasoning to taste
Black pepper to taste
Onion powder to taste
Garlic powder to taste
Paprika to taste

DELICIOUS Stuffed Basa Fillets - Baked to perfection
A delectable entree consisting of succulent crab and Italian seasoning, gourmet has never been so easy. Nonna shares some tips and tricks to ensure you are the star of the show at your next dinner party, or simple family time meal made into a decadent experience. Basa fillets are tasty on its own, now taken to the next level – baked and healthy – mangia!
INGREDIENTS
basa fish fillets – 3 (will make 6 portions)
eggs – 2
romano cheese – ½ cup
Italian parsley – ½ cup chopped
garlic – 1 clove, finely chopped
crab meat – 1 cup, chopped
panko crumbs – 1 cup
olive oil – for drizzle
DIRECTIONS
Prepare the stuffing: In a bowl add 1 cup of crab meat, 1 egg, ½ cup of romano cheese, ½ cup of Italian parsley and 1 finely chopped garlic clove – place mixture aside
Prepare your egg wash; beat one egg
Prepare the fillets; cut each fillet in half. Slice the fillets in various directions to complete flat and spread the fillet. Spread the stuffing across each fillet. Roll the fillet (watch Nonna for some good technique) and pierce the roll with a toothpick (leave the toothpick in until ready to eat). Dip the entire roll in the egg wash, then roll in the panko crumps. Place the completed roll in a parchment lined deep baking dish/pan. Drizzle each roll lightly with olive oil. In a preheated oven, bake the stuffed basa fillets at 400 degrees for 30 minutes.
Mangia! (don’t forget to remove the toothpicks!)

Greek Style Whole Stuffed Fish. Whole baked fish, stuffed with feta, olives, lemon zest and chives.
Greek / Mediterranean style baked fish stuffed with feta, olives, chives and lemon zest is really easy to do and will have your guests applauding. Succulent whole fish infused with the flavors of Greece. For the full printable recipe, please visit

Ingredients
1 x 500g Red Snapper, Red Roman or any tall body fish
8 Calamata olives, pitted and cut into rounds
70g Feta cheese
3 Tbs Chives finely chopped
3 Tbs Lemon zest
1 Tbs Olive oil
Melted butter to baste
Instructions
Have your fishmonger gut, scale and defin the fish, then butterfly the fish, including the head.
Place the feta in a bowl and pour the olive oil over the cheese. Using a fork, mash the feta until the oil has been absorbed.
Add the olives, chives and zest and mix this in.
Open the fish and spoon the feta mixture into the fish keeping everything closer to the dorsal side.
Close the fish and press it firmly down to compress the filling.
Using butchers twine, tie the fish closed, taking care not to tie too tightly as this will cause the fish to tear while cooking.
Brush the fish liberally with melted butter.
Bake the fish in a preheated oven at 180c / 350f for 20 minutes. Remove the fish and baste again with the butter in the pan.
Return the fish to the oven and bake for a further 15 minute.
Remove the fish from the oven, cut and remove the twine, and serve immediately.
