grated lemon peel, (optional)

almonds, (optional), ground
1/2
cup
butter or margarine
3/4
cup
sugar 2 ea eggs
1/2
cup
mashed banana, (4 medium)
Directions:
Preheat oven to 350 F. Grease 9 x 5 inch loaf pan.
Sift flour,baking powder, baking soda, salt, ginger, allspice and
nutmeg together in bowl. Add lemon peel and almonds. Stir until combined.
Set aside.
Beat butter in large mixing bowl until soft amd creamy. Beat in sugar
until light and fluffy. Add eggs and beat until thoroughly blended. Beat
in flour mixture alternately with bananas until mixture is well blended.
Pour into prepared pan.
Bake in center of oven 1 hour to 1 hour 5 minutes, or until toothpick
inserted in center comes out clean.
Cool in pan on wire rack 10 minutes. Invert from pan and cool
completely on rack.
Variation: Banana-walnut or -pecan bread: Omit almonds. Add 3/4 cup
coarsely chopped walnuts or pecans with bananas.

CLASSIC BANANA BREAD RECIPE
▪560g (6 large) very ripe bananas
▪115g or 1 stick butter, melted
▪3 large eggs
▪120g or 2/3c dark brown sugar
▪70g or 1/4c molasses
▪5g or 1tsp vanilla extract
▪140g or 1/2c sour cream
▪40g or 3Tbsp olive oil
▪420g or 3 1/4c ap flour
▪12g or 2tsp salt
▪15g or 1Tbsp baking powder
▪6g or 1 1/4tsp baking soda
Mash bananas. Add eggs, brown sugar, molasses, vanilla, sour cream, and melted (but not super hot) butter. Whisk to combine.
In a separate bowl, combine flour, salt, baking powder, baking soda. Whisk to combine then fold dry ingredients into wet. Don’t overmix.
Spray or butter a loaf 1.5lb (10”x5”x3”) loaf pan then prepare with a sling of parchment. Spray or butter parchment then transfer banana bread mix into the pan. See recipe below if using a 1lb loaf pan.
Tap to level then bake at 350F/175C for 60-70min.

EVERYTHING BANANA BREAD RECIPE
▪100g or 3/4c walnuts
▪20g or 2 1/4Tbsp sesame seeds
▪20g or 2 1/4Tbsp poppy seeds
▪20g or 2 1/4Tbsp hemp seeds
▪20g for 2 1/4Tbsp lax seeds
▪150g or 1c dark chocolate chunks (+ a few extra for topping)
Mix seeds and nuts, add to a sheet tray and toast in 350F/175C oven for 15min until walnuts have taken on a slight golden color.
Use same recipe as classic banana bread above. After wet and dry ingredients are combined, fold in toasted seed mix then the chocolate.
Spray or butter a loaf 1.5lb (10”x5”x3”) loaf pan then prepare with a sling of parchment. Spray or butter parchment then transfer banana bread mix into the pan. Top with additional chocolate chunks
Tap to level then bake at 350F/175C for 60-70min.

I really have a thing with cinnamon apple and cinnamon banana combos at the moment! ❤️ Maybe it’s because it’s Autumn ???? So I thought why not combined all these flavours in an amazingly moist loaf! ????
It’s super easy to make and it tastes absolutely incredible ????

All you need is????
For the cake:
225g unsalted butter, melted and slightly cooled
150g granulated sugar
50g light brown sugar
2 large eggs
2 tsp vanilla extract
250g plain flour
1 tsp bicarbonate of soda
1/4 tsp salt
4 Medium bananas, ripe, mashed
For the apple mix:
2 medium Granny Smith apples (peeled and diced)
2 tbsp granulated sugar
1 tsp cinnamon
Bake 160C (fan) 55-65 mins or until a toothpick comes out clean
Tin size: 8.5x5” 3lbs

Delicious Moist and Chewy Banana Bread Recipe
There's banana and then there's THE banana bread. This recipe makes the most chewy and moist bread that it's almost like cake. The addition of turbinado sugar to the pan creates a crunchy caramel like crust that is irresistible. Turn this bread into a dessert by simply adding toppings such as vanilla ice cream, caramel sauce, candied walnuts and a pinch of sea salt!
Dry Ingredients:
1 1/3 cups all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon baking soda
2/3 cup white sugar
3/4 teaspoon kosher salt
1 teaspoon cinnamon
1/4 cup turbinado sugar
Wet Ingredients
3 ripe bananas
5 tablespoons unsalted butter, softened
2 eggs, room temperature
1. Preheat oven to 350 F
2. To a large mixing bowl add, 1 1/3 cups all purpose flour, 1/4 tsp baking powder, 1/2 tsp baking soda, 2/3 cups white sugar, 3/4 tsp kosher salt, 1 tsp cinnamon
3. Combine and set aside
4. To another mixing bowl, add 3 very ripe bananas and mash well with a fork (consistency almost like a paste with small lumps)
5. Add 5 tablespoons softened and unsalted butter and 2 room temperature eggs
6. Combine with a fork, mashing up the butter as you go
7. Combine wet and dry ingredients together and mix well with a spatula
8. To a greased loaf pan, pat turbinado sugar on all sides liberally
9. Pour batter into pan
10. Shake to distribute evenly and pat on counter to remove any air bubbles
11. Bake for 40-50 min (test with a toothpick around 40 min and if comes out cleanly, remove)
12. Let cool on a wire rack

The very best Banana Bread is so easy to make! This is my absolute favorite recipe for using up overripe bananas, it's soft, moist, and bursting with banana, brown sugar, and cinnamon flavors. Slathered with melted butter it's perfect alongside a hot cup of coffee for breakfast.
