Going Bananas Over Bananas Banana Crunch Cake
An over the top, rich and amazing cake that fills a need for bananas that even monkeys would even appreciate!
Louisiana Crunch Cake, easy, delicious, simple to make
Cake:
3 cups all purpose flour
2 tsp baking powder
1 tsp salt
1 1/2 cups butter, softened
2 cups granulated sugar
4 eggs, room temperature
1 tsp coconut extract
1/2 tsp vanilla extract
3/4 cup milk
Glaze:
1 1/2 cups powdered sugar
3-4 Tbsp milk
1/4 cup toasted coconut (optional)
1/2 tsp coconut extract (optional)
Preheat oven to 325°. Combine flour, baking powder, salt, set aside. Cream sugar and butter together in mixer fitted with paddle attachment. You can use a hand mixer also. Add eggs, one at a time mixing after each. Add extracts. Add flour and milk, alternating between the two, beginning with flour, ending with flour. Pour into a greased and floured tube pan. Bake 60-65 minutes or until toothpick insert comes out clean. Remove from oven, cool in pan 15 minutes then turn out onto baking rack to cool. When cooled, transfer to cake plate. Stir together Glaze ingredients. Add coconut extract if desired. Drizzle over cake. Sprinkle with toasted coconut if you want.

Banana Crunch Muffins by Ina Garten
1 ½ cups all-purpose flour
1 cup sugar
½ tsp. baking soda
1 tsp. baking powder
½ tsp. salt
½ cup butter or margarine
1 large egg
3/8 cup whole milk (or 6 T.)
1 tsp. vanilla
½ cup mashed banana
½ cup diced bananas
½ cup chopped walnuts (optional)
½ cup granola
½ cup sweetened shredded coconut
Optional as toppings: ¼ cup dried banana chips, ¼ cup walnuts, ¼ cup shredded coconut
1. Preheat your oven to 350˚.
2. Line 12 muffin tins with paper liners.
3. Mix the flour, baking soda, baking powder, and salt into a mixing bowl.
4. Cream together the sugar and melted butter. Then add in the egg, milk, vanilla and mashed bananas, and add them to the flour mixture. Mix with a whisk until combined but don’t overmix.
5. Fold in the diced bananas, walnuts, granola, and coconut into the batter. Spoon the batter in to the paper liners filling each one ¾ full.
6. Top each muffin with dried banana chips, walnuts, or coconut depending on your taste.
7. Bake for 20 minutes or until the tops are brown and bounce back when touched.
8. Cool slightly, remove from the pan and serve with butter, jellies, or honey if desired.

Ingredients
3 cups all-purpose flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 pound unsalted butter, melted and cooled
2 extra-large eggs
3/4 cup whole milk
2 teaspoons pure vanilla extract
1 cup mashed ripe bananas (2 bananas)
1 cup medium-diced ripe bananas (1 banana)
1 cup small-diced walnuts
1 cup granola
1 cup sweetened shredded coconut
Dried banana chips, granola, or shredded coconut, optional
Directions
Preheat the oven to 350 degrees F.
Line 18 large muffin cups with paper liners. Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment. Add the melted butter and blend. Combine the eggs, milk, vanilla, and mashed bananas, and add them to the flour-and-butter mixture. Scrape the bowl and blend well. Don't overmix.
Fold the diced bananas, walnuts, granola, and coconut into the batter. Spoon the batter into the paper liners, filling each 1 to the top. Top each muffin with dried banana chips, granola, or coconut, if desired. Bake for 25 to 30 minutes, or until the tops are brown and a toothpick comes out clean. Cool slightly, remove from the pan, and serve.
