How To make Basic Drop Biscuits
2 1/2 cups Cake flour
2 tablespoons Cake flour
1 tablespoon Sugar
2 teaspoons Baking powder
4 tablespoons Shortening
1 Egg -- lightly beaten
1 cup Milk
Spray shortening
Preheat oven to 425~. In a food processor or a large bowl,mix the flour with the salt,sugar and baking powder.Cut the shortening into the dry ingredients until the mixture is the texture of cornmeal. Seperately mix the egg with the milk,and stir all but 2 tbs. of this liquid into the dry mixture. Mix just enough to make a uniformly moistened dough. Drop spoonfuls of the dough onto a greased and cornmeal coated cookie sheet about 1" apart. Brush tops with reserved liquid.Bake in the preheated oven until puffed and brown,about 12 minutes. Cool for a few minutes before serving. Yields about 15 biscuits.

Instructions
00:00 Introduction
00:31 Arrange a rack to the center of your oven and preheat oven to 450F (230C).
Line a baking sheet with parchment paper and set aside (alternatively you may bake biscuits directly on ungreased baking sheet).
00:37 Cut butter into 8 pieces and place in a microwave-safe bowl. Heat in 15 second intervals, stirring in between, until melted. Set aside to allow to cool.
00:48 Combine flour, sugar, baking powder, salt, and baking soda in a large bowl and whisk until thoroughly combined.
01:16 Pour buttermilk into a large measuring cup or medium-sized bowl. While whisking, slowly drizzle in melted butter until combined (it is OK if the butter separates a bit).
