How To make Beans with Plum Sauce(Lobio Tkemali)
1 c dried kidney beans or red beans
2 cloves garlic
1/2 tsp red pepper flakes
1/2 tsp salt
1 bay leaf
1/4 c red wine vinegar
1/3 c plum jam
2 tsps cilantro
minced
fresh ground black pepper :
to taste
Soak beans overnight, rinse and drain. Cook beans with one clove of garlic (halved), 1/4 tsp. red pepper flakes, bay leaf, and 2 Tbsp. vinegar until tender, about 1 hour. Drain. While beans are warm, stir in salt, remaining vinegar, one clove of garlic (minced), jam, cilantro and pepper. Serve at room temperature.

How to Make Khmeli-Suneli
This is a very aromatic Georgian herb and spice mix that is used in many Georgian dishes.
2 Tbsp Dried Dill Weed
2 Tbsp Dried Marjoram
2 Tbsp Dried Parsley Flakes
2 Tbsp Ground Summer Savory
1/2 tsp cayenne pepper (optional)
2 Tbsp Dried Mint Leaves
2 Tbsp Coriander Seed (toasted) can use more
2 Tbsp Whole Black Peppercorns (toasted)
2-4 Dried Bay Leaves
2-4 Tbsp Fenugreek Seeds - or more to taste
Some curcumin/turmeric is optional I didn't add it

Chakapuli - Georgian Gastro Guide
400g veal
50g scallion
200g tarragon
50g coriander
2 cloves of garlic
1 piece of paprika
50g of onions
30ml white wine
100g fresh Tkemali (Georgian plum) or 50g Tkemali sauce
pinch of salt
Cut the onions and herbs. Start with layering onions on the bottom of your casserole, top it up with the layers of meat and herbs. Add a pinch of salt and black pepper. Then continue with layering meat, then herbs and onion. Top all of these with Tkemali, paprika and garlic. Pour some white wine and pinch of pepper. The dish is ready in 90 minutes.
