Beef Enchiladas | McCormick Enchilada Sauce Mix | Micah's Cookery
Ingredients:
1-2 tbsp cooking oil
1 Ramly Minced Beef 400g
1 white onion, diced
3 cloves garlic, minced
1/2 Bell Pepper (red and green), diced
1 tsp salt
1 tsp ground black pepper
1 tsp enchilada sauce mix
Enchilada Sauce
3 tbsp Butter
1 42g Mccormick Enchilada Sauce Mix
1 Duchef Tomato Puree 220g
1 1/2 cup Water
1 cup Grated Cheese
Salt & Pepper to taste
6pcs Mission Wraps Onion & Chive
3-4 slices of Bega Cheddar Cheese (optional)
dried parsley, garnish

Tofu Tacos better than Taco Bell!
Taco Tuesday was lit! These vegetarian tofu tacos rivaled many meat tacos I have eaten. The key is to have a crispy corn tortilla to encapsulate your delicious filling. I am shocked yet impressed at how flavorful these were. Also make sure to make that “crema” it changes the game! shout out to @itdoesnttastelikechicken for the inspiration!

99G Protein PACKED Cheesy Enchiladas! ???? Hot, Protein-Packed, & Delicious! ????????A taste so good, it'll teleport you to Lupe Tortilla! ????????
Ingredients:
- 448g 96% lean ground beef
- 120g diced green chilis
- 3g garlic powder
- 3g chili powder
- 549g enchilada sauce
- 6 low-carb high-fiber tortillas
- 224g fat-free mozzarella cheese
Instructions:
1. In a skillet, cook 448 grams of 96% lean ground beef until it's browned.
2. Add 120 grams of diced green chilis, 3 grams of garlic powder, and 3 grams of chili powder to the cooked beef. Mix everything together and let it simmer for a few more minutes.
3. Preheat your oven to 250 degrees Fahrenheit (120 degrees Celsius).
4. Pour a small amount of enchilada sauce into a baking dish to create a base.
5. Start building your enchiladas: Take a tortilla, place a portion of the meat mixture in the center, add some enchilada sauce, and sprinkle with fat-free mozzarella cheese. Roll up the tortilla tightly and place it seam side down in the baking dish.
6. Repeat the process with the remaining tortillas and filling, using up all the ground beef.
7. Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle the rest of the cheese evenly.
8. Bake in the preheated oven for 20-30 minutes until the cheese is melted and bubbly.

The Best Enchiladas Ever!
Roll into the weekend with a plate of steaming hot enchiladas!
Ingredients:
1 lb. 80/20 Ground Beef
Salt and Pepper to taste
1 White Onion, chopped
2 tbsp. Chili Powder
1 tsp. powdered garlic, and onion powder
½ tsp. Mexican oregano
2 tsp. Cumin
¼ cup Flour
2 ½ cup Beef Stock
12 oz. medium Cheddar from the block, freshly grated
12-16 fresh Yellow or White Corn tortillas

Enchilada Cups
For these bite-sized enchilada cups, baked tortilla cups are filled with meat, beans, veggies, spices, and then topped with cheese before being baked. Serve with a dollop of sour cream or salsa.

INGREDIENTS
12 small flour tortillas
10 ounce can red enchilada sauce
14 ounce can black beans rinsed and drained
4 ounce can green chilies
2 ½ cups shredded cooked chicken rotisserie has extra flavor!
3/4 cup corn
2 tablespoons taco seasoning
1 cup shredded Mexican-blend cheese
¼ cup chopped fresh cilantro
1-2 green onions thinly sliced
1 Roma tomato diced small
Sour cream topping optional
Aluminum foil balls for each cup
INSTRUCTIONS
Preheat oven to 350 degrees.
Warm the tortillas in the microwave for about 30 seconds so they are more bendable.
Using a regular size muffin pan place one tortilla in each cup and gently press the tortilla down into the cup, pleating the tortilla where necessary, to form a cup. Roll an aluminum foil ball to place lightly inside each cup (not pressing down too far into the cup) to help it keep its shape.
Bake for 10-12 minutes or until the cups have hardened slightly on all sides. Remove the pan from the oven and set aside. Leave the oven on.
While cups are baking in a large mixing bowl combine the enchilada sauce, black beans, green chilies, chicken, corn and taco seasoning mixing well.
Carefully spoon the filling into each cup until the cup is full.
Place a small amount of cheese on top of each cup. Return pan to the oven and bake for 15 minutes or until cheese is melted and filling has heated up.
Remove from the oven and serve as is or sprinkle each cup with cilantro, green onions, and tomatoes. You can top with sour cream if desired.
