How To make Beef~ Pepper & Mushroom Kabobs
: 1 lb Boneless beef top sirloin : -steak, cut 1-1/4" thick (or : -boneless chicken : -cubes or boneless pork : -cubes) : 1 md Green, red or yellow bell : -pepper, cut into 1-1/4" : -pieces : 2 tb Olive oil : 1 tb Lemon juice : 1 tb Water : 2 ts Dijon-style mustard : 1 ts Honey : 1/2 ts Dried oregano leaves, : -crushed : 1/4 ts Pepper : 12 lg Mushrooms : Salt, if desired Trim excess fat from beef top sirloin steak; cut steak into 1-1/4" pieces. Whisk together oil, lemon juice, water, mustard, honey, oregano and pepper in large bowl. Add beef, bell pepper and mushrooms, turning to coat. Alternately thread beef, bell pepper, and mushrooms on each of four 12" metal skewers. Place kabobs on rack in broiler pan so surface of meat is 3 to 4" from heat. Broil 9 to 12 minutes for rare to medium, turning occasionally. Season with salt, if desired. Makes 4 servings. Garlic Herb Beef Skewers | ONIE Project
Savory herbs and plenty of garlic make this recipe a crowd pleaser! Try our Garlic Herb Beef Skewers for an easy weeknight meal! This recipe takes 30 minutes to prepare and serves 4. Find the full recipe here:
Ingredients:
2 cups instant brown rice
8 wooden skewers
1 lb beef sirloin, cut into 1 inch cubes
2 large bell peppers, cut into chunks
1 (8 oz) package whole mushrooms
Non-stick cooking spray
ONIE Garlic Herb Marinade
Preparation:
1) Prepare rice according to package instructions. Set aside. Soak skewers in water to prevent burning.
2) In a large bowl, whisk together marinade ingredients. Add beef, peppers & mushrooms to bowl. Toss to coat. Thread pieces of beef, bell pepper & mushroom on skewers. Discard remaining marinade.
3) GRILL INSTRUCTIONS: Preheat grill to medium (350-375°F). Grill skewers, covered, 8-11 minutes, turning occasionally. Use a meat thermometer to reach desired doneness. Serve skewers over rice. OR
OVEN INSTRUCTIONS: Preheat oven broiler to HIGH. Lightly coat a foil-lined baking sheet with cooking spray. Add skewers to baking sheet. Broil on HIGH, 3-4 inches from broiler 3-5 minutes. Flip skewers & broil 3-4 more minutes. Serve skewers over rice.

Beef Kofta Kebabs
Ingredients:
2 lbs Ground Beef
1/2 Onion (finely minced)
4 Garlic Cloves (finely minced)
1 Bunch Of Mint (finely minced)
1 Bunch Of Parsley (finely minced)
1 Tbsp Lemon Juice
1 tsp Ground Coriander
1 tsp Ground Ginger
1 tsp Cinnamon
1/2 tsp Nutmeg
2 tsp Allspice
1 tsp Cumin
2 tsp Paprika
1/2 tsp Cayenne
1/2 tsp Ground Green Cardamom
1 tsp Sumac (optional)
Salt and Black Pepper
Accoutrements:
Pita or Flat Bread
Sliced Onion
Sliced Cucumber
Sliced Tomato
Shredded Lettuce
Lemon Wedges
Tzatziki Sauce Ingredients :
1 Cup Yogurt
1/2 Cup Cucumber (grated)
1 Garlic Clove (minced)
1 Tbsp Mint (finely minced)
1-2 Tbsp Lemon Juice
1 Tbsp Olive Oil
Salt
Instructions:
In a large bowl combine all the tzatziki sauce ingredients and season with salt to taste. Place in the fridge until ready to serve.
In a large bowl combine the ground beef, all the dry spices, finely minced onion, garlic, mint, lemon juice, and parsley. Season with salt and pepper then mix until completely incorporated and slightly tacky.
Form a few ounces of the ground meat mixture into a oblong shape in your hand. Using a flat skewer, skewer the meat through the center and evenly spread the meat across the length of the skewer. (PRO-TIP: keep the meat cold, this will help the meat stick and stay on the skewer). Repeat with the rest of the kebabs. Place the kebabs on a sheet tray then place in the fridge to keep cold while you fire up the grill.
Next using a charcoal grill with a few wood chunks added for smoke, grill the kebabs suspended by a metal kebab holder (Check Amazon). Turn the kebobs every 30 seconds until cooked then remove from the grill. (You can also grill the kebabs directly on the grill just make sure the grill grate spacing is close together).
Serve the kofta with sliced tomatoes, red onion, cucumber, lemon wedges, lettuce, pita or flatbread, and the tzatziki sauce.
