How To make Beignets(New Orleans Style Square Donuts)
1 package Hot Roll Mix -- (1-pound)
1/4 cup sugar
1 teaspoon vanilla
Confectioners' sugar -- sifted
Prepare roll mix according to package directions, adding 1/4 cup sugar to flour mixture and vanilla to hot water. When kneading is completed, proceed as follows: Coat a bowl with shortening or oil; roll ball of dough in bowl to coat with oil. Cover with waxed paper and a towel. Refrigerate for several hours or overnight. Remove dough from refrigerator; punch down and cut in half. On a lightly floured surface, roll each half to make a 9 x 12-inch rectangle. Cut each into 12 (3-inch) squares. Cover with a towel and let rise for 30 minutes. Deep fry beignets, two at a time. Fry 1-1/2 minutes; turn and fry 1-1/2 minutes or until golden brown. Sprinkle generously with confectioners' sugar. Makes 2 dozen.

1 tbsp. yeast
1/3 cup warm water
1/4 cup sugar
1 large egg or 2 small
1/3 cup evaporated milk or whole milk
2 tbsp. melted Crisco or butter
1/2 tsp salt
1/2 cup powdered sugar
2 cups oil for frying

But you don't need to be in NOLA to enjoy fresh-fried beignets. Since Mardi Gras is approaching, celebrate it the right way with this homemade beignets recipe, loaded with powdered sugar in true Café du Monde fashion!

Beignet Recipe Like No Other/ New Orleans Style Step By Step Demo
The easiest recipe to follow with the most accurate and amazing results. Follow my recipe and you will make the lightest fluffiest beignet/ French Donut ever.
INGREDIENTS:
470 g all purpose flour/ 3 3/4 cups
2/3 cup milk
1 large egg
3/4 tsp salt
1 tbsp instant yeast
1/4 cup sugar
3 tbsp unsalted butter/ 43g
1/2 cup warm water or more if needed
1 cup powdered sugar to coat the beignet
extra flour for the working surface
canola or vegetable oil for deep frying
1/2 tbsp vanilla extract
PREPARATION:
Start by prepping the wet ingredients. Mix the milk, egg, vanilla and set aside.
Mix the yeast, sugar, and warm water and set aside. You also need the butter to be room temperature.
Add the flour and salt to the stand mixer, turn it on medium speed then add the milk mixture then the butter. Start adding the yeast mixture slowly, you might need to add more or less water depending on your flour. You need to knead the dough in the mixer for at least 5 minutes. the dough should become so soft, shaggy and a little sticky. Grease a bowl, add the dough and cover for two hours.
Two hours later use extra flour to spread the dough into a big square that is 1 centimeter or 1/2 inch in thickness.
You can cut into big or small squares. I used a heart cookie cutter also just for fun.
You can place them on individual parchment papers for easy transfer.
Cover and let them rest for 30 more minutes. Heat the oil to 375°f and fry for 2 minutes while flipping on both sides. Cover with lots of powdered sugar while still warm and enjoy.
