Using the Breadmaker for the mixing & rise process, & a conventional oven for the bake, this method creates delicious sourdough with only about about 10 minutes of very easy work.
This method is the culmination of 100s of iterations of bakes to simplify everything for ease of handling, time taken, & also minimising the clean-up.

This is a very easy way to make Sourdough Bread, in a Breadmaker. It is so good, and this load lasts me about a week. Here is the info on where I bought my original starter, how I activate the starter, and then how to make the Breadmaker Sourdough Bread.
I bought the packet of sourdough starter from Breadtopia...I have a link on how to get that packet started.
How to Activate your starter for breadmaker dough:
Take out Starter from Refrigerator
Add
25 grams of Sourdough Starter
50 drams Flour
50 grams H20
Mix and set in a warm place for 5 or 6 hours
Bread Maker Sourdough Bread:
Ingredients:
3 cups bread flour (I use all purpose)
1 cup lukewarm water
3/4 cup activated and fed starter (above)
1/2 Tablespoon Sugar
1 3/4 Tsp salt

This video shows how to make a sourdough loaf from start to finish, including baking, in a bread machine. You do need a sourdough starter that has been fed and is active. There is no commercial yeast added...simply water, flour, salt, and starter. If you need help creating a starter check out my videos:
After teaching another round of sourdough basics classes this past fall, I decided to explore ways to help make baking 100% sourdough bread at home easy for my busy students. Personally, I love the traditional hands-on approach to making sourdough. The series of stretches and folds and hours spent in the kitchen tending to my dough helps me feel connected to my food and acts like a mediation. But I recognize that it IS time-consuming and not everyone can stick to it on a regular basis.
Rather than be discouraged, I'd love my students to feel that it's okay to utilize a bread machine to assist them. After all, it's still sourdough. It's still homemade. And it's still healthier than grocery-store bread!
Formula:
551 grams water
408 grams all-purpose flour (I used Blue Bird local flour)
204 grams whole wheat (I used Pueblo Seed Company local flour)
68 grams rye flour (I used dark rye from Great River)
26 grams salt (I used grey salt, see below)
SPECIAL NOTE: I stop my machine and unplug it after 30 minutes of kneading on the dough cycle. I then remove the paddle and put the insert with the dough back into the machine to proof. This can take anywhere from 5-12 hours depending on the temperature inside your home. I like to start the whole process shortly before I go to bed. Then I allow the bread to rise overnight and bake it first thing in the morning. That gives it a long fermentation making the bread more digestible.
I'll list the bread machine I have but I encourage you to look for a used one if you don't have your own. In my small town, there are always practically new bread machines for sale at the thrift store...often for under $20. Ask friends and family if they have one gathering dust before making a big purchase!
