This is a finished 1.5 pound loaf of cottage cheese &onion & dill bread baked in a bread machine, NOTE WHEN I SAY” three tablespoons of dill That IS A MIS SPEAK!!, I meant to say three TEASPOONS! Be sure to use 3 teaspoons of dill NOT tablespoons in this recipe.... REPEAT....3 teaspoons of DILL WEED, NOT TABLESPOONS...I made some toast with butter the next day following filming... sliced thick (another advantage of bread machines, you get to decide slice thickness!) ....it was fantastic! One of the reasons I love bread machines is you can make gourmet artisan breads like this cottage cheese, onion, dill bread that you will NEVER find at a grocery store or restaurant. Truly special to make for your family and friends,
No-Fail Dilly Bread (No Knead!)
The greatest part of this dilly bread is the ease at which it comes together. While bread is usually a very hands-on process, this bread has a short amount of prep time. With everything bagel seasoning, dill, and cottage cheese, it's a unique recipe you'll make time and again!

INGREDIENTS:
- 1 1/4 cup whole milk cottage cheese, slightly warm
- 2 tbsp honey
- 1 tbsp butter melted
- 2 tsp dried dill
- 1 tbsp everything bagel seasoning
- 1 large egg
- 2 1/4 cups all-purpose flour
- 1 package (2 1/4 tsp) instant active dry yeast
- 1/4 tsp baking soda
INSTRUCTIONS
- Blend the cottage cheese until mostly smooth.
- In a large bowl, combine the blended cottage cheese, honey, butter, and egg. Whisk until smooth. Add the everything bagel seasoning, dried dill, flour, baking soda, and yeast. Using a fork or Danish whisk, combine the ingredients into a wet shaggy dough. Mix until the dough just begins to clear the sides of the bowl. Drizzle with neutral oil and cover to allow the dough to rest for one hour.
- After one hour, preheat the oven to 350°F. Do not worry about making sure the dough is doubled in size. Punch down and knead it into a ball. Place the ball on parchment paper in a 4-quart Dutch oven or 4-quart oven-safe bowl. Let the dough rest for an additional 30 minutes.
- After 30 minutes, use a sharp knife to cut an X into the top of the ball. Place the dough in the preheated oven. Bake until the bread is golden with an internal temperature of 190°F, about 40-50 minutes. Remove from the oven and cool in the bowl for 5 minutes. Finish cooling on a wire rack.

And now for the recipe first you want : 600 grams of water, 14 grams of salt, 7 grams of bread improver, 28 grams of fresh yeast, and if you want you can add in 7 grams of sugar and fat, 906 grams of white organic flour, first we start by adding our flour into our machine bowl, this machine wants to be a 3 speed machine or you can use a bread machine if you like, now start by adding in the rest of the ingredients and the water, I start the machine up on 1st speed and we're gonna mix this for around 5 minutes now we've reached 5 minutes, we're now going to check the dough to see what it's like if it's too soft add in more flour if it's too stiff add in more water, now we will continuously mix this now for the next 5 minutes now the dough is ready,
Place the dough back into an oiled bowl. Cover and leave to rise until double in size about 1-1½ hours.
Knock back the dough and cut into 3 x 400 gram loafs, lightly knead again. Then shape as desired. For a cottage loaf roll about ⅔ of the dough into a tight ball and place on a baking sheet. Roll the remaining dough into another ball and place on top. Dip two fingers into flour and push down through both balls of dough to the the baking sheet. Cut slashes in the side of the loaf.
Cover loosely with a large plastic bag or slightly damp tea-towel and leave in a warm place until doubled in size or place into a proofing box
Preheat the oven to 230℃ Bake the loaf about 30 minutes until golden-brown, 15 minutes in just check if the bread is start to burn turn off the oven or turn down and turning your bread around for even bake, the loaf will sound hollow if tapped on the bottom.
Transfer to a wire rack to cool before serving.

Baking Fresh Dill Bread: Need something to do with all of that extra dill?
Hola Farmsteaders! Have too much dill? Jose and I LOVE fresh bread! When we were living in Hawaii and working for a small farm we were taking home loads and loads of free dill. Our only problem was what to do with all of that beautiful smelling fresh herb. Doing research Jose and I found a recipe for dill bread and were instantly intrigued. After we baked the first loaf we were hooked. Our friends always have the same reaction when we share a loaf. They say I have never heard of dill bread but after a few bites they say can I have the recipe?
What I love about dill bread is it is a no-knead bread so you will save your arms the extra work and it cooks up really moist. This bread is also savory with just a hint of sweetness. It is incredible for sandwiches. You can serve up a slice for breakfast buttered or add some scrambled eggs and you won't be disappointed. Are you in need of some bread crumbs for another recipe? Dry out some of this bread and use it for flavorful bread crumbs. Jose and I recently made a meatloaf using bread crumbs from the last few slices of our dill bread and it turned out incredible.
Recipe:
1/2 cup warm water (100 to 110 degrees)
1 tsp sugar
2 packets of active dry yeast or 4 1/2 tsp.
2 cups small curd 2% cottage cheese (warmed up to room temperature)
2 1/2 cups regular flour
2 cups of whole wheat flour
3 tbsp sugar
2 tbsp butter (melted)
2 tsp salt
2 eggs (beaten)
1/2 tsp baking soda
1/4 cup minced onion
1/4 cup fresh dill
Get your yeast rising by stirring it into the 1/2 cup of warm water and 1 tsp of sugar. Let this rise for about 5 minutes.
Pour the warmed up cottage cheese into a large mixing bowl. Stir the yeast mixture in with the cottage cheese. Then add the rest of your ingredients! Stir in the flour just until everything is moistened.
Allow your dough to rise for about an hour until it has doubled in size in a buttered bowl. Then split it into two buttered loaf pans and allow the dough to rise for another hour. While waiting for the dough to rise in the pans you will want to preheat the oven to 350 degrees. Once the dough has doubled in size you can bake it in the oven for 40 to 45 minutes.
Once you remove the loaves from the oven allow them to cool for 5 - 10 minutes in the pan. When they have cooled slightly you can remove them from the pans and brush them with melted butter. If you want you can sprinkle the loaves with a little sea salt. Then allow them to finish cooling on a cooling rack. Then slice it up and enjoy! Yummy!!!
