Brunswick Stew
Brunswick Stew is a classic southern dish full of delicious smoked pork, vegetables, and a savory BBQ broth. It’s the perfect way to warm up after working outside on the homestead on a cool, rainy day.
Brunswick Stew
4 Tablespoons butter
1 large onion chopped
3-4 cloves garlic, minced
1/4 teaspoon cayenne pepper ( optional)
4 cups pork broth or chicken broth
2 Tablespoons Worcestershire sauce
1 can chopped tomatoes
1 can whole kernel corn
1 can lima beans
2 cups chopped pork (may substitute chopped, smoked chicken)
16 oz bottle of BBQ sauce (I used Williamson Brothers Original)
Melt butter in Dutch oven over medium heat. Once melted, add onion, garlic, and cayenne pepper until onions are soft.
Add the stock, vegetables, BBQ sauce, chopped pork, Worcestershire sauce and bring to a boil. Reduce heat to medium-low stirring occasionally for 1 hour.
Serve in a bowl with your favorite crackers and a glass of sweet iced-tea. So good!

Ingredients
6 slices bacon, chopped
1 large yellow onion, chopped
1 (2½-pound) rotisserie chicken, meat removed and chopped (about 5 cups)
2 cans diced tomatoes
1 can creamed corn
1 12oz package frozen lima beans
2 cups chicken broth
1 cup barbecue sauce, I used Sweet Baby Ray's Sweet & Spicy
1 tablespoon distilled white vinegar
1 tablespoon Worcestershire sauce
1 teaspoon celery salt
black pepper, to taste
1 teaspoon red pepper flakes
Directions
In a large saucepan, cook the bacon over medium-high heat until almost crisp, about 5 minutes. Add the onion and cook until softened, about 5 minutes.
Add the chicken, tomatoes, corn, lima beans, broth, barbecue sauce, vinegar, Worcestershire sauce, celery salt, red pepper flakes, and black pepper to taste. Bring to a boil. Reduce to a simmer, cover, and cook until the lima beans are tender.

Brunswick Stew on the Myron Mixon BARQ 2400 Pellet Smoker
Recipe:
2 pounds of cooked meat (pulled pork, chicken, brisket, chuck, or any combination of these)
1 28oz can of crushed tomatoes
1 14oz can of chicken broth
3 medium red potatoes, diced
1 medium yellow onion, diced
12oz bag of frozen whole kernel corn
12 oz bag of frozen baby lima beans
16-18 oz bottle of your favorite barbecue sauce
1/4 cup brown sugar
1 tablespoon of your favorite barbecue rub
1 teaspoon salt
1/2 teaspoon cayenne pepper
Place all the ingredients in a large Dutch oven. I used this one:
Cook uncovered on your smoker at 275°F for 60 t0 90 minutes, stirring every 15 minutes. Cover the Dutch oven, raise the temp to 325°F, and let simmer for another 90 minutes to 2 hours until all the veggies are completely tender.

Here's the recipe. It makes 16 pints or 8 Quarts. Remember that by the time you put the stew in the jars, the potatoes are not yet cooked. If you plan to have some that hasn't been canned, you'll need to cook it for another 30-60 minutes until the potatoes are done.
Carter's Real Brunswick Stew:
4lbs cooked, pulled pork
2lbs cooked, shredded chicken breast (canned is fine)
1 1/2 medium onions, diced
4-5 large cloves garlic, diced
2 jalapenos, diced (seeded or not)
2 medium russet potatoes, peeled, diced, blanched for 3 min and rinsed.
16oz corn, frozen or fresh
1 1/2 pints BBQ sauce
2 quarts chicken stock
28oz can crushed tomatoes
14 oz can diced tomatoes
1T liquid smoke
1/2cup Worcestershire Sauce
8oz tomato paste
1/2 tsp black pepper
2 tsp salt
2 tsp smoked paprika
Saute onions, garlic and jalapenos in a light oil while the potatoes are blanching. Then add all of the ingredients to the stock pot. Bring to boil, reduce to simmer for about 10 min.
Ladle stew into jars, leaving 1 head space. Pressure can pints for 75 min or quarts for 90 minutes at the appropriate pressure for your altitude.
