Homemade Milk Chocolate Truffles | Valentine's Day | Restless Chipotle
If you're looking for a special gift for Valentine's Day (or any other special occasion) you can't go wrong with this easy chocolate truffles recipe! Use milk chocolate, dark chocolate, or semi-sweet to create gorgeous homemade candies that rivals the expensive artisan chocolates in the shops!

Ingredients
Chocolate Ganache
½ cup heavy cream
8 ounces bittersweet chocolate, chopped (or milk chocolate or semisweet)
3 tablespoons butter at room temperature
Chocolate Coating
2 cups bittersweet chocolate, cut into small pieces (or milk chocolate or semisweet)
1 tablespoon vegetable shortening
White Chocolate Drizzle
½ cup white chocolate, chopped
1½ teaspoons vegetable shortening
Instructions
Chocolate Ganache
Cut the butter into squares and set aside.
Bring the cream just under a boil – bubbles will form around the sides of the pan. (about 185F on an instaread thermometer)
Remove the pan from the heat and add the chopped chocolate.
Let stand 2 minutes.
Carefully stir the mixture until smooth.
Add the butter.
Stir until smooth and well mixed.
Refrigerate until cold and firm, about 1 hour.
Form the mixture into tablespoon sized balls.
Place the balls in the freezer for about 10 minutes.
Dip in the melted coating and drizzle with the white chocolate.
Store in the refrigerator in a tightly covered container.
Chocolate Coating
Add the chocolate and the vegetable shortening to a microwave safe bowl.
Melt on 50% power for 2 minutes, stirring every 30 seconds. (you may not need the whole 2 minutes.
White Chocolate Coating
Melt the white chocolate and shortening as above.
Stir until blended.

Chocolate truffles by hand are simple and elegant. They thus called by the fungus resemblace truffle, chocolate truffles are traditionally made chocolate confectionery chocolate ganache. Created by Mr. Dufour in Chambéry, France, in December 1895, it was not until 1902, in London, when Antoine Dufour sold in your store Prestat who gained public recognition. Consider placing chocolate coatings and placed in a paper box surface lined silk tied with a ribbon as a gift. Ingredients: 1 cup sour cream 8 oz. bittersweet chocolate chips 8 ounces semisweet chocolate chips 2 tbsp. coffee, orange or hazelnut liqueur 2 tsp. vanilla extract 1/2 teaspoon. kosher salt 1 cup unsweetened cocoa powder Directions of chocolate truffles: In a medium saucepan, bring cream to a boil. Remove from heat. Add the chocolate and stir until melted and mixture is smooth. Add the liqueur, vanilla and salt. Pour into a shallow bowl and let stand for 15 minutes. Cover with plastic wrap and refrigerate until firm, at least 2 hours and up to one week. Place cocoa in a small bowl. Using a 2 teaspoons. cookie scoop or melon ball 1 inch enough chocolate to make a chocolate truffles ball an inch. Roll the ball in cocoa, shake off excess, and place it in an airtight container. Repeat with remaining chocolate, place wax paper between each layer truffles. Refrigerate up to three days. Serve chocolate truffles at room temperature. To change added: roll finely chopped nuts, grated coconut, caramel crushed or powdered sugar. Makes 50 chocolate truffles.

DARK CHOCOLATE BARK RECIPE
Ingredients:
7 oz dark chocolate (200g)
1/2 cup almonds (100g)
1/2 cup peanuts, raw (100g)
1 tbsp maple syrup
pinch of salt
NUTRITIONAL INFO (per piece):
107 calories, fat 7.6g, carb 9.2g, protein 3g
Preparation:
For roasted nuts: in a bowl combine almonds, peanuts and maple syrup.
Spread in air-fryer basket, sprinkle with salt and air-fry for 10 minutes at 340F (170C).
Break the chocolate into small pieces and melt in the microwave, stirring every 30 seconds.
Add the roasted nuts and stir until all the nuts are coated.
Spread the mixture on a lined baking tray, top with some extra nuts and put in the freezer for 30 minutes.
Cut into bite sized pieces and store in the fridge or freezer.
