How To make Black Bean Lasagna
2 c Spaghetti sauce of choice
1 1/2 c Cooked AM Black Turtle Beans
4 Whole grain lasagna noodles
-- (cooked) 2 c Ricotta cheese
-OR- low fat cottage cheese 3/4 lb Mozzarella cheese, grated
1/2 c Grated Parmesan cheese
1/2 ts Onion powder
1/2 ts Garlic powder
1/2 ts Italian Seasoning
Preheat oven to 350 F. Mix seasonings with spaghetti sauce, and spoon a small amount of the sauce into the bottom of a baking dish. Combine the rest of the sauce with the cooked beans. Assemble the lasagna in a 7-1/2" x 12" baking dish. Lay down 2 noodles, then follow with the beans and sauce, then add ricotta or cottage cheese, mozzarella, and the Parmesan cheese. Repeat, using the remaining noodles, end with the Parmesan cheese. Bake for 20 minutes. 8 oz : Lasagna Noodles
1 ts : Olive Oil
1/2 c : Onions; Chopped
2 : Garlic; Minced
28 oz : Spaghetti Sauce
8 oz : No Salt Added Tomato Sauce
8 oz : Reduced-fat Cream Cheese
30 oz : Black Beans; Canned, Rinsed
1/2 c : Chopped Green Bell Pepper
1/4 c : Chopped Cilantro
12 oz : Cottage Cheese; Lowfat
1/4 c : Sour Cream; Light

Recipe:
Easy Black Bean Lasagna:
Nonstick cooking spray
1 15oz can black beans 1/2 tsp cumin
rinsed & drained 8oz cottage cheese
1 28oz can crushed 1/8 tsp powder or 1 tsp fresh garlic
tomatoes undrained 2 eggs
1 15oz can fat-free refried beans salt & pepper to taste
3/4 cup chopped onion 10 uncooked lasagna noodles
1/2 cup chopped bell pepper 1-1/2 cups shredded cheddar cheese
3/ 4 cup chunky style salsa 1-1/2 cups shredded mozzarella cheese
1tsp chili powder
Cooking:
Heat oven to 350*F Spray 9x13 inch backing pan with cooking spray. In large bowl combine black beans, tomato's, refried beans, onion, bell pepper, salsa, chili powder, & cumin. Mix well. In small bowl, combine cottage cheese, garlic eggs & cumin. Mix well. Spread 1 cup of tomato mixture in bottom of baking dish.
Top with half of the noodles, overlapping slightly, Top with half of the remaining tomato mixture. Spoon cottage cheese mixture over the top, and top with half of the cheese, then remaining noodles, tomato mixture and cheese.
cover spray coated foil. Bake at 350*F for 45 minutes, uncover and let stand 15 minutes before serving.
Makes 15 servings.
