Black Bean Soup
Subtly flavoured comfort – that describes this traditional Mexican soup best of all. Prepared easily with a pressure-cooked blend of black beans and other ingredients, the Black Beans Soup is a wholesome dish that you will love to slurp up. You will be amazed by how hung curds works even better than the stereotyped choice of fresh cream in garnishing this satiating soup.
Preparation Time: 10 minutes. Cooking Time: 15 minutes. Serves 3.
½ cup black beans, soaked for 5 hours and drained
2 tsp oil
¼ cup finely chopped onions
2 tsp chopped garlic (lehsun)
1 cup roughly chopped tomatoes
Salt to taste
For the garnish
2 tbsp hung curds (thick dahi)
1. Heat the oil in a pressure cooker, add the onions and garlic and sauté on a medium flame for 2 minutes.
2. Add the tomatoes, black beans, 1½ cups of water and salt, mix well and pressure cook for 3 whistles.
3. Allow the steam to escape before opening the lid.
4. Allow it to cool a little and blend in a mixer till smooth.
5. Transfer the mixture into a deep pan, add ¼ cup of water, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
Serve hot garnished with hung curds.

FIRE ROASTED BLACK BEAN SOUP
1 15 oz of can black beans with the juice
⅓ of one japanese big sweet potato medium size or any sweet potato
⅓ medium Sweet onion
3 to 4 cups veggie broth
1 tsp garlic
¼ cup chopped sundried tomato
3 oz mushrooms chopped approximately ⅓ cup chopped
2 cups chopped spinach fresh size large pieces
1 cup roasted frozen corn
1 tsp dried oregano
1 tsp smoked paprika
1 tsp ground cumin
½ tsp chipotle powder
½ tsp crushed red pepper
1 tbsp lime juice
Salt to taste
Chopped the onion, garlic and mushroom . start sauteing onion for 5 to 7 minutes in an instant pot. . Add garlic and then put oregano, smoked paprika, ground cumin and chipotle powder and crushed red pepper and salt to your taste . Saute for 2 minutes. Add broth as needed . Add mushroom and saute another minute. Add sweet potato. Saute for 2 minutes . Add sun dried tomatoes saute again for 2 minutes and add beans and corn. Saute again for a minute.. Add 2.5 cups of veggie broth. Put the instant pot on high for 5 minutes. Let the pressure get released. Add spinach . add lime juice at last.. enjoy.
Black Bean Soup with Guacamole Salsa
The soup is a great source of protein, healthy fats , and fiber. It is also delicious and easy to make!
Here's the recipe-
Ingredients for soup:
1 small onion
1 tbsp olive oil
1 celery stalk chopped
1 medium carrot chopped
2 garlic cloves, minced
2 cups vegetable stock
1 19 ounce can black beans, drained and rinsed or you can cook from dry
1/2 teaspoon chili powder
1 teaspoon dried oregano
1 half teaspoon cumin
1/2 teaspoon salt
Directions:
In a medium Soup pot on medium Heat, saute the onions in oil until translucent. Add the celery, carrots, and garlic and sauteed for 2 to 3 minutes. Add the stock, beans, chili powder, oregano, cumin, and salt. Bring to a boil, then reduce heat. Cover with lid and simmer for 15 to 20 minutes. To finish making this soup, with a hand blender or food processor, blend half or all of the soup until smooth. (be careful when blending hot liquids). Return to pot and reheat. Serve with a generous helping of The Best Guacamole Salsa along with vegan sour cream, vegan cheddar cheese if you like, and tortilla chips. This soup can also be meal prepped for at least 4 days.

7. Pinch of turmeric

10. Pinch of black pepper
11.Hot and sour tomato soup - 1/2 tsp
12.Honey - 1 tsp
13.Bean stock - 2 cups
14.Handful chopped coriander leaves
15.Fresh lime juice - 1/2
16.Garnish with some coriander leaves or green onion and some sliced almond and pistachio
