How To make Blue Ribbon Mincemeat Pie Filling
6 cups lean ground beef
12 cups chopped apples -- peeled and cored
6 cups raisins
1 cup apple cider or brandy
1 tablespoon ground cinnamon
1 tablespoon ground allspice
1 tablespoon ground nutmeg
3 1/2 cups white sugar
Directions: 1 In a large skillet over medium heat, cook the ground beef thoroughly. Being sure not to overbrown it. 2 Place chopped apples and the cooked ground beef in a food processor and pulse until the mixture is made up of pea sized chunks. 3 In a non-reactive skillet combine the apple and ground beef mixture with the raisins, apple cider or brandy, ground cinnamon, ground allspice, ground nutmeg and the white sugar. Simmer for 30 minutes. 4 Cool filling to lukewarm and pour into freezer bags (2 cups per bag). Freeze filling until needed. One baggie will fill one 8 inch double crust pie. Thaw filling before using. Makes 8 pints filling

No Christmas is right without mince pies. They have been part of the British festivities for centuries, but way back then, they were made with real meat. Today's mince pies are made with sweet mincemeat, and you can see how to make your own with our homemade Christmas mincemeat video - link above.
This video shows you how easy the mince pies are to make using shortcrust pastry, which is my favourite, and some like a puff pastry too. Make the size you like, and have the lid you prefer, but I hope this video will show you how quick and easy it is to make delicious Christmas mince pies.
RECIPE FOR CHRISTMAS MINCE TARTS
300 g shortcrust pastry
1 x 450g jar mincemeat (homemade or shop bought
2 tablespoons icing sugar
• Preheat the oven to 200°C Lightly grease a 12-hole muffin or bun tin.
• Sprinkle your worktop lightly with a little flour, roll out 2/3 of the pastry to 3mm thick, then cut circles to fit your tin and line with the pastry.
• Roll out the remaining pastry to the same thickness and cut smaller circles for lids, or cut out stars or other fancy shapes as you wish.
• Pop a generous teaspoon into each pie and pop on a lid; there is no need to wet the pastry as the mincemeat is sticky and will hold the lid in place.
• If you have covered the tart entirely with pastry, snip a small slit or cross into the centre of each lid to release any steam.
• Bake in the preheated oven for 20 mins (15 mins if making canapé-sized ones), or until golden brown. Leave to cool for five minutes, then lift from the tin and cool on a baking rack.
• Store in an airtight tin.
