Cilantro Lime Pasta Salad
This cold salad is fresh and bright with a tangy dressing that is perfect for spring and summer. This is a great side dish for anything you are grilling or would be a terrific main dish.
Recipe as follows:
Dressing: 1/2 cup plain greek yogurt
1/4 cup fresh lime juice
1/4 cup chopped cilantro
2 garlic cloves minced
1/2 tsp. salt
1 Tbsp mayonnaise
blend together, put in fridge.
Salad: 8 oz bow tie noodles, cook according to directions
1 1/2 cup corn
1 1/2 cup cherry tomatoes, halved
1/2 red onion, chopped
1 or 2 avocados, diced
2 Tbsp chopped cilantro
jalapeno seeded and chopped to taste
Mix salad ingredients together in a bowl and top with dressing. Mix and enjoy.

✅Ingredients
Pasta:
• 1 pound bowtie pasta
• 8 ounces cherry tomatoes, halved
• 8 ounces cheddar cheese, cubed
• 1 English cucumber, diced
• ½ red onion, diced
• 4 slices cooked bacon, crumbled
• 1 avocado, diced
Cilantro Ranch Dressing:
• 16 ounces green salsa
• 1 cup mayonnaise
• 1 bunch cilantro
• 1 lime, juiced (about 2 tablespoons)
• 1 tablespoon granulated garlic
• 1 tablespoon onion powder
• 2 teaspoons salt
• 1 teaspoon black pepper
✅Instructions
1️⃣ Cook pasta according to package directions. Drain and rinse with cold water until pasta is cooled.
2️⃣ While pasta is cooking, halve the tomatoes, cube the cheese, chop the cucumber, dice the onion and crumble the bacon.
3️⃣ In a blender, make your dressing by adding in the green salsa, mayonnaise, cilantro, lime juice, salt, garlic powder, onion powder, and black pepper. Blend until smooth.
4️⃣ In a large bowl, combine the pasta and the dressing together and stir until pasta is all coated in the sauce. Top with the tomatoes, cheese cubes, cucumbers, red onion, and bacon crumbles. Avocado is optional but if adding in, do so right before serving.
5️⃣ Serve right away or cover and keep refrigerated until ready to serve.

Ingredients
1 box farfalle pasta (bow tie)
1/2 cup basil pesto
1 1/2 cups pearl mozzarella
32 cherry tomatoes or 12 oz
Instructions:
1. Bring a pot of water to a boil then generously salt the water and add the Farfalle pasta to the pot. Cook al dente.
2. Once the pasta is done cooking, pour it into a colander and rinse with cold water to stop the pasta from cooking.
3. Now place the pasta into a large bowl and stir in the pesto, pearl mozzarella, and sliced cherry tomatoes. Serve chilled.

You Need: Bow Tie Pasta, 3 or 4 Garlic Cloves, 1/2 Cup Soy Milk, 1 Cup Pine Nuts, 3 Bunches Basil, Olive Oil
Recipe: 1)Boil Water 2)Add Bow Tie Pasta, Cook it until it tastes right sampling from time to time roughly 12 minutes 3) Spread 1 Cup of pine nuts evenly on a baking tray or aluminum foil 4) Bake @ 400 till golden brown 5) Combine 1 Cup baked pine nuts, 3-4 cloves of garlic in a food processor, mix briefly. 6) Add 3 bunches basil, 1/2 cup soy milk, 3-4 cloves of garlic and mix into a thick sauce 7)Combine the sauce and the strained pasta in a bowl and toss 8) Plate the pasta and microwave for 1-2 minutes 9) Serve it with sprinkled parmesan and crushed red peppers if desired. Tastes Great Cold Too!!

How to make Easy Bowtie Pesto Pasta Salad
In this quick video, Dr. Kirby and I will teach you how to make an easy bow tie pesto pasta salad. Just like we taught our students via zoom. You don't want to miss it.

16 oz of your favorite pasta and cook according to directions
1-2 Tablespoons of pesto (or to taste)
1 teaspoonful of olive oil (or to taste)
1 4oz container of goat cheese or other options like feta crumbles, parmesan, mozzarella, etc.
1 container of cherry tomatoes
you can add other ingredients like asparagus, spinach, kale, broccoli, mushrooms, etc. Cut your vegetables into 1-inch pieces or to your liking. Add pasta and veggies together and mix. After mixing add in the pesto and olive oil and mix well. A little pasta water can help spread the pesto.
