1 1/2 c FOUNDATION SPONGE 1/2 c Chopped raisins 1 ts Salt 1/2 c Chopped figs 1 tb Melted shortening 1/2 c Broken walnuts 2 tb Sugar 2 c Bran White flour Combine ingredients in order given, using sufficient white flour to form a dough just stiff enough to knead. Knead on lightly floured board until smooth and elastic. The dough should be softer than one in which bran is not used. This dough will rise slowly. When it doubles in bulk, form into loaves and place in well-oiled pans. Cover and let rise until double in bulk. Bake in hot oven (425? F) about 45 minutes. 2 small loaves. Mrs. W.R. Easy Simple Whole Wheat Bread - Ready in 90 Minutes
INGREDIENTS: 2 cups whole wheat flour 1/2 cup bread flour or all-purpose flour 2 teaspoons (1 packet / 7 grams) yeast: instant or active dry 2 Tablespoons sugar 1 teaspoon salt
1 cup milk, heated to 120-130° F for instant yeast (or 110-120°F for active dry) 2 Tablespoons olive oil (or any vegetable oil) 1 egg about 1/4 cup additional bread flour

Method: Sieve dry ingredients in a bowl. Add all the dry ingredients in the dough mixer and mix for 1 minute. Slowly add butter, oil and water & mix until the wet and dry ingredients have been combined completely. Then increase the speed and knead dough until the dough is no longer sticky. Leave the dough to rest for 15 minutes in a bowl, greased with oil bottom & top and cover it with plastic wrap. After 15 min shape the dough and put it in a loaf mould of 9x4x4 and place it in a proofer. Make sure the dough rises 3/4 only so it has enough space to bake. bake for 45-50 minutes at 170c.
