How To make Bran Raisin Muffins
1 1/2 c Shreds of wheat bran cereal
1/2 c Raisins
1/2 c Boiling water
1 Egg
1 c Buttermilk
1/4 c Vegetable oil
1 1/4 c All-purpose flour*
2/3 c Sugar
1 1/4 ts Baking soda
1/4 ts Salt
1/4 ts Ground nutmeg
Heat oven to 400F. Grease bottoms only of 12 medium muffn cups, 2 1/2 x 1 1/4 inches, or line with paper baking cups. Mix cereal, raisins and water;
let stand 2 minutes. Beat egg in 2 1/2-quart bowl; stir in buttermilk, oil and cereal mixture. Stir in remaining ingredients, all at once, just until flour is moistened (batter will be lumpy). Fill muffin cups about 3/4 full. Bake until golden brown, about 20 minutes. Immediately remove from pan. About 1 dozen muffins;190 calories per muffin. *If using self rising flour, omit baking soda and salt. Source: Betty Crocker's Cookbook, 6th Edition

Betty demonstrates how to make Refrigerator Raisin Bran Muffins. These are a great blend of Raisin Bran, flour, sugar, eggs, buttermilk, and shortening. The batter can be stored in the refrigerator for up to 1 week, so you can bake a few at a time and get that straight-from-the-oven taste all week!
Refrigerator Raisin Bran Muffins
1/2 of a 15-oz. package Raisin Bran cereal (If you don't like raisins, just use bran cereal.)
2 1/2 cups self-rising flour
1 1/2 cups sugar
2 eggs, well beaten
2 cups buttermilk (or imitation buttermilk . . . if necessary, see my Quick Tip on converting milk into buttermilk)
1/2 cup butter, melted and cooled
In a large mixing bowl, beat 2 eggs. Stir in 1 1/2 cups sugar, 2 cups of buttermilk, and 1/2 cup melted butter. Add 2 1/2 cups self-rising flour and 1/2 of a 15-oz. package or raisin bran cereal. Mix, just until all ingredients are combined. You may bake these muffins immediately, or cover and refrigerate up to a week or more. To bake, spoon batter into muffin pans with paper liners, filling 2/3 full. Bake at 350 degrees or until done and beginning to brown. This will make about 2 dozen muffins. It is great to pack in lunch boxes. These muffins are not just empty calories; they also have a good amount of protein and fiber, and you can control exactly what you put in them! Enjoy!!! --Betty :)

MOIST Bran Muffins w/Raisins. THE BEST!!
I’ve tried to perfect muffins MANY TIMES to make them moist and not dry. Especially the next day, different recipes seem to dry out overnight. However! :-) These ones are a sure winner. I like that they don’t have white sugar in them also. I used raisin bran cereal this time, but you can use any brand cereal you like. Please follow along as I explain a little tips and tricks along the way. One of them is using cupcake papers and the difference between using theirs and not using those. Thank you so much, I really hope you will make these wonderful and very very delicious muffins!
