OOOooo I love CHRISTMAS CRACK (aka SALTINE CRACKER TOFFEE). This is an easy candy recipe for saltine toffee cookies. I'm showing you step-by-step how to make CHRISTMAS CRACK which is my Christmas candy obsession. This stuff is addicting!

???? CHRISTMAS CRACK RECIPE
70 SALTINE CRACKERS
1 CUP BUTTER
1 CUP BROWN SUGAR
1 1/2 CUPS CHOCOLATE CHIPS
NUTS OR OTHER TOPPINGS
-PREHEAT OVER TO 400 DEGREES
-LINE A 14x20 SHEET PAN WITH FOIL AND SPRAY WITH NON-STICK COOKING SPRAY
** you can use parchment paper instead of foil for easier removal of the candy**
-LINE PAN WITH CRACKERS IN A SINGLE LAYER
-IN A SAUCEPAN, COMBINE BUTTER AND BROWN SUGAR. BRING TO A FULL BOIL.
-BOIL FOR 3 MINUTES STIRRING CONSTANTLY.
-IMMEDIATELY POUR SAUCE OVER CRACKERS AND SPREAD COMPLETELY.
-BAKE CRACKERS AT 400 DEGREES FOR 5 MINUTES OR UNTIL TOFFEE IS BUBBLY.
-REMOVE FROM OVEN AND SPRINKLE CHOCOLATE CHIPS OVER CRACKERS.
-LET CHOCOLATE SIT FOR 3-4 MINUTES TO MELT.
-SPREAD MELTED CHOCOLATE OVER CRACKERS THEN TOP WITH NUTS OR OTHER TOPPINGS.
-LET COOL FOR 10-15 MINUTES THEN PUT IN FRIDGE UNTIL COLD AND CHOCOLATE IS SET.
-BREAK INTO PIECES.

INGREDIENTS:
- 2 cups all-purpose flour
- 1/2 teaspoons baking soda
- 8 tablespoons of salted butter, melted
- 6 tablespoons of creamy peanut butter, melted ( I used Dark Chocolate PB Trimmed (Similar to PB2)), use whatever type of peanut butter you wish here
- 1 cup brown sugar
- 1/2 cup sugar
- 1 egg + 1 egg yolk, at room temperature
- 2 teaspoons vanilla extract
- 1 cup chopped Peanut Butter cups (I used dark chocolate!)
DIRECTIONS:
Preheat oven to 325 degrees F. Add butter and peanut butter to a microwave safe bowl, and heat in 30 second increments until melted. Let cool completely.
While butter/peanut butter mixture is cooling, chop peanut butter cups. You may chop them as coarsely or as small as you wish!
Mix the flour and baking soda in a bowl and set aside. In another bowl, mix the cooled butter/peanut butter and sugars until they are combined. Add the egg, egg yolk, and vanilla and stir until mixed. Gradually add flour and mix until a dough forms – it will look crumbly at first, but it will come together. Fold in peanut butter cups.
Shape the dough into a ball the size of a golfball. Place on a baking sheet two inches apart and bake for about 15 minutes or until the edges are slightly brown. Always keep an eye on the cookies as the timer is nearing the end! Every oven and cookie differs slightly, so baking time may vary.
Remove cookies from the oven, allow them to sit on the pan for a few minutes, then transfer to a cooling rack.
Eat a cookie while its still warm, or allow to cool completely!
These cookies taste great warm, at room temperature, or even refrigerated! You can transfer the dough into a ziplock bag to freeze for later use or bake all of it and have a cookie party ????
