1/2 lb Boned, Skinned Chicken
Breasts 1 tb Lemon Juice
1/2 ts Garlic Powder
1/2 ts Seasoned Salt
1/4 ts Each Oregano & Pepper
Few Drops Liquid Smoke Flavoring 1 tb Vegetable Oil
1/2 c Green Pepper Strips,
1/2 c Thin Onion Wedges
1/2 c Tomato Wedges
1/4 c Mild Picante Sauce
in Bowl, Combine First 7 Ingredients & 1 1/2 t. Oil. Cover & Refrigerate 2 To 8 Hours. Broil Chicken Until No Longer Pink in The Center. Meanwhile, in A Large Skillet, Saute Green Peppers & Onions in Remaining Oil Until Crisp-Tender. Add Tomatoes & Saute 1 Min. Stir in Picante Sauce & Heat Through. Cut Chicken Into Thin Strips& Top With Vegetables. Serve With Four Hot Corn Tortillas.

4 Sprigs (3g) - Fresh Oregano, Roughly Chopped
Spice Mix -
2 tsp (4g) - Paprika
1 tsp (2g) - Ground Cumin
2 tsp (4g) - Onion Powder
2 tsp (4g) - Garlic Powder
2 tsp (8g) - White Granulated Sugar
2 tsp (6g) - Corn Starch
2 tsp (7g) - Sea Salt Flakes
2 tsp (4g) - Ground Chilli
1/2 tsp (0.5g) - Cayenne Pepper
Guacamole -
2 - Avocados, Mashed
1/2 - Red Onion (Spanish Onion), Diced
2 - Tomatoes, Diced
6 Sprigs (5g) - Coriander (Cilantro)
1 - Lime, Zest & Juice
1 Tbsp (15ml) - Extra Virgin Olive Oil
Sea Salt Flakes
Cracked Black Pepper

Ingredients
* 1 pound boneless skinless chicken breasts, cut into 1/2 strips
* 1/2 red bell pepper, thinly sliced
* 1/2 yellow bell pepper, thinly sliced
* 1/2 green bell pepper, thinly sliced
* 1 yellow onion, thinly sliced
* 1 tsp Paprika, or adjust
* 1/2 tsp onion powder
* 1/2 tsp cumin powder
* 1/2 tsp garlic powder
* 1/2 tsp pepper powder
* Salt to taste
* 2 tbsp olive oil, divided
* Lime juice of 1 lemon
* 8 flour tortillas warmed
* White Sauce
For white sauce
* 1/2 cup sour cream
* Cilantro 2 tbsp
* 1 small jalapeno, chopped
* Garlic minced 1
* Lemon juice 1 tsp
* Salt to taste
Preparation
Oven method
1. Preheat oven to 425° F. Spray 9x13 baking dish with cooking spray.
2. In a large mixing bowl, combine chicken, bell peppers, onions, olive oil, spices and lime juice and stri until combined and pieces are coated.
3. Spread fajita mixture in the baking dish. Bake at 425 ° F for 25 minutes or until chicken is no longer pink and vegetables are tender. Stirring halfway through baking.
4. Spoon small amount of chicken and veggies onto each tortilla. Top each with sour cream or your favorite toppings.

This has been a staple for me lately and only takes about ~30 minutes. Quick, efficient, delicious and perfect for meal prepping. Serve them up on tortillas or add to a bowl with rice and beans! ????????

INGREDIENTS
- ~ 2 lbs boneless skinless chicken thighs
- 1 sliced red onion
- 3 sliced bell peppers
- Avocado oil
- Fajita Seasoning (I used @hardcorecarnivore Tex Mex)
- Fresh chopped cilantro for garnish
Extras
- @sietefoods almond flour tortillas
- Spicy sour cream (sour cream mixed with hot sauce)
- Guacamole
DIRECTIONS
1. Add chicken thighs and sliced veggies to a large bowl. Add oil and seasoning. Mix till we'll combined. (You could do this in advance to marinate if you'd like. I would do it longer than 24 hours to avoid the baggies from getting soggy.)
2. Bake in the oven at 425 for ~25 minutes than broil for 3-5 minutes.
3. Remove from the oven and let rest for 5-10 minutes. Slice and ENJOY! ????????

Big flavor on one pan! These baked chicken fajitas are a great way to toss together simple fresh vegetables and simple seasonings you probably have on hand right now (we gave up packaged taco seasoning ages ago!) for a fast dinner.
These oven baked chicken fajitas work perfectly with boneless skinless chicken thighs or breasts (try to get one that's low in retained water if you can) and a bag of frozen peppers and onions could easily sub for the fresh ones.
