How To make Brown Sugar Pie
3 Eggs, separated
2 c Milk
2 c Brown sugar
4 tb Cornstarch
3 tb Butter
1 ts Vanilla
1 Baked pie shell
Preheat oven to 350 degrees. Beat egg yolks and add 1/2 cup of milk. Stir in brown sugar, salt, cornstarch and 1 1/2 cups milk. Mix well and cook over medium-heat, stirring constantly until bubbly and thick. Remove from heat and stir in butter and vanilla. Pour into prepared pie shell. Beat egg whites until frothy. Gradually add granulated sugar and beat until stiff peaks form. Spread meringue over pie and bake in preheated oven until meringue is golden brown. Greetings! The Holidays Are Coming! Yes they are! Halloween is close and then on to the big guns, Thanksgiving and Christmas! I don't know about you, but Thanksgiving would not be Thanksgiving in our house unless there was a pecan pie on the table! Today I want to share with you how I make my pecan pie with a bit of a twist. This one is a brown sugar pecan pie, made with brown sugar, dark cane syrup and lots of pecans. This makes an amazing, dark and rich pecan pie that you are going to love.
Pecan pie is probably one of the easiest pies to make. Few ingredients that you might even have on hand and a pie shell that you can make from scratch or buy premade. You can use a frozen shell or a refrigerated version that you press into your own pie plate. The day that I made these, I was actually making a birthday pie for one of my daughter's friends who requested it. So I made mine in a very good quality frozen pie shell. I love having these on hand for anytime the moment strikes to throw a quick pie together. You do what you like when you make your pecan pie.
Pecan pie is nothing more than a custard without milk. The milk is replaced with butter and cane syrup or corn syrup if you like and lots of eggs. This bakes a bit longer than you might think so make sure to test the pie when you think it might be done and then return it to the oven like I did for ten minutes if it is just underdone. You don't want to assume it will set as it cools because then you could end up with a mess in the end.
This pie is dark, sweet and rich. A little slice will to a long way and this pie will serve eight easily. Top with a dollop of freshly whipped cream and you are ready to go to dessert heaven! Put this on your table as one of your dessert selections this Thanksgiving and your family will go nuts (get it?) over this pecan pie!

PECAN PIE RECIPE
Preheat oven to 425 F.
1 - 9 pie crust, unbaked
1 cup pecans, broken
1 cup corn syrup
4 eggs, slightly beaten
1/4 cup butter, melted
2/3 cup light brown sugar
1/4 teaspoon salt
1/2 teaspoon vanilla
Add eggs to medium mixing bowl and slightly beat with whisk. Add brown sugar and corn syrup. Combine well. Add melted butter, salt and vanilla. Whisk well. With wooden spoon stir in pecan pieces.
Place unbaked pie shell on baking sheet. Add Pecan Pie filling to pie crust.
Bake at 425 degrees F. for 10 minutes. Reduce oven, do not open oven door, to 350 degrees F. and bake an additional 25-35 minutes.
Cool on racks for 2-3 hours before serving. This Pecan Pie can be made 1 day in advance and stored in an airtight container.

Brown Sugar Pie
Brown Sugar Pie is a bight of caramel goodness with just the right amount of sweetness! You would think that this pie would be sickeningly sweet, I sure thought it would be, but that is not the case. I found this recipe in my father's recipe box, but had never known him to make it? But, knowing my dad, there is nothing bad in his recipe box, so I decided to make it. Wow, it's good and extremely easy to make. Why not give it a try?

Old School Canadian Maple Sugar Pie| Sugar Pie | recipe below works out great

Todays video I made a very Canadian pie. In a short few weeks it is Canadian thanksgiving and my Cousin Mel and I wanted to do a little something to celebrate that. She does have a visit during the video. This pie is popular in the French communities especially in Quebec. I love Quebec may even move there in a couple of years. Anyhoo I will have the recipe below and a link to my cousin's page. I hope you are all doing wonderful. Have a fab day everyone.
Ingredients
1 large and deep pie crust I would say use a 10 inch pie . Prick with fork and parbake it 5 minutes in a 400 degree oven then turn oven down to 350 degree farinhight
1/2 cups of lightly packed brown sugar
!/4 cup of maple syrup
2 tsp of vanilla
2 tablespoons of flour
1 tablespoon of cornstarch
2 large egg yolks
2 large eggs
1 cup evaporated milk ( warm this up in a sauce pan)
4 tablespoons of cold butter to add to the milk after the milk is warm and removed from heat
Ok the method
mix together the first 7 ingredients
then warm the milk on stove medium heat to bring to a simmer then remove from heat and add your butter
slowly pour and mix the milk into the mixture until well combined and the sugar dissolves
pour into pie shell that has been prepared as above and bake at 350 degree farinhight until the mixture is set and can still have a slight jiggle to it because as it cools it will set up even more.
It can take if in small shell like I used 25 minutes about
and 45 minutes in larger shell
It will look a little spongey when ready so just have a peak at it around the 20 minutes mark and just keep watching it. lol
