Maple Brown Sugar Cookies!
INGREDIENTS:
• 1 3/4 sticks unsalted butter
• 1 3/4 cups packed dark brown sugar
• 2 1/2 cups all purpose flour
• 1/2 tsp. baking soda
• 1/4 tsp. baking powder
• 1/2 tsp. salt
• 1 egg + 1 egg yolk
• 1 tsp. vanilla extract
• 2 1/2 tbsp. maple syrup
• 3 tbsp. brown sugar + 3 tbsp. white sugar (mixed together)
DIRECTIONS:
• Preheat oven to 350 degrees
• In a small pan, heat the butter over medium-low heat, swirling the pan often until the mixture becomes a light golden brown. Immediately remove from heat and allow to cool until semi-solid and soft. (Note: I quickly cooled my brown butter by pouring it into a large mixing bowl and placing it in the freezer for ten minutes).
• Cream together the butter and 1 3/4 cups dark brown sugar until smooth.
• Add egg + egg yolk, vanilla, and maple syrup, and mix well.
• In a separate bowl combine the flour, salt, baking soda and baking powder.
• Add the dry ingredients to the wet ingredients and stir until well combined.
• Roll tablespoon sized balls of cookie dough in the remaining brown sugar + white sugar mix and place on a baking sheet.
• Bake 10-12 minutes until edges are lightly golden brown. Allow to cool.
This recipe makes about 30-40 cookies.

Brown sugar cookies recipe
Ingredients:
1/2 cup salted butter (melted and cooled slightly) 113g
3/4 packed brown sugar (light or dark) 135g
1 large room temperature egg 50-55g
1 teaspoon vanilla extract 4g
1/4 teaspoon fine sea salt 1.5g
1 + 1/3 cup all purpose flour 175g
Directions:
Preheat oven to 350F/175C. Line cookie sheets/baking pans with parchment paper. In a large bowl combine melted butter and brown sugar. Whisk vigorously for 1-2 minutes until the butter and sugar are well incorporated and the mixture is thick in texture. Add the egg, vanilla and sea salt. Continue whisking for another 1-2 minutes until everything is well combined and the mixture is light and airy in texture and glossy in colour. Sprinkle the flour over the top of the mixture and using a spatula mix until just combined and no streaks or flour remain. Using a 3/4 tablespoon cookie scoop drop cookies onto prepare pans, ensuring that you leave a little room for spreading. Bake for 7-8 minutes, take them out as soon as the bottoms are golden brown and then immediately transfer to a wire rack to finish cooling. This recipe will make approximately 30 small (3/4 tablespoon) or 15 regular (1 +1/2 tablespoon) cookies. If using. a 1.5 tablespoon cookie scoop increase baking time by approximately 2 minutes.

The Best Sugar Cookies to Decorate with Royal Icing (No Spread!!)
If you´re curious to see how I make my cookies, and how they keep their shape, well look no further! I use a common recipe but have made a few simple tweaks to make these delicious, no spread cookies a sure hit!
My favourite part is that it calls for brown sugar (I prefer using dark brown sugar), it gives it so much flavour and a beautiful golden colour. These cookies are great for decorating with royal icing as they can be handled and transported easily without worrying that you´ll break them but still maintain a softer bite! They aren´t too sweet, so once they are iced, they taste amazing. And if you're scared of too much puff, you can reduce the amount of baking powder from 1tsp as said in the video to 1/2 tsp.
The changes I've made to the recipe:
- add dark brown sugar instead of golden brown sugar
- add 2 teaspoons of butter emulsion flavouring in addition to the vanilla
- add 1/2 to 1 teaspoons of baking powder instead of 1/4

These brown sugar cookies might just be the softest and chewiest I've shared yet!

Ingredients
1 cup unsalted butter melted and cooled at least 10 minutes or until nearly back to room temperature, about 10 minutes (226g)
1 3/4 cup brown sugar* tightly packed (250g)
1 large egg + 1 egg yolk room temperature preferred
1 ½ teaspoon vanilla extract
2 ¾ cups all-purpose flour (350g)
1 Tablespoon cornstarch
3/4 teaspoon baking soda
½ teaspoon baking powder
3/4 teaspoon salt
Granulated sugar for rolling
Instructions

00:33 Combine your melted (and cooled) butter and sugar in a large bowl and stir until well-combined.
Add egg, egg yolk, and vanilla extract and stir well.
01:54 In a separate, medium-sized bowl, whisk together flour, cornstarch, baking soda, baking powder, and salt.
02:26 Gradually add dry ingredients to wet and mix until combined.
Cover bowl with plastic wrap and transfer to the refrigerator to chill for at least 45 minutes.
03:00 Preheat oven to 350F (175C) and line a cookie sheet with parchment paper (if you don't have parchment paper, bake directly on an ungreased cookie sheet).
Once oven has preheated, remove your chilled cookie dough from the refrigerator and roll dough into approximately 2-Tablespoon-sized scoops. Roll gently to form a ball and roll through granulated sugar until completely coated with sugar.
Place on prepared cookie sheet (space cookies at least 2 apart).
Bake on 350F (175C) for 11-12 minutes. The centers of the cookies may still seem slightly underbaked -- allow cookies to cool completely on cookie sheet to finish cooking there, cookies will be too fragile to move while hot.
