I kept wanting to make these pralines and was in search of the best recipe. Not just those crunchy type of pecan pralines, but the soft, chewy type. When I came across the chewy pecan pralines at the stores, I would buy one and kept thinking I wanted to learn how to make them. I searched and searched for the best recipe. I finally came across a recipe that was almost what I wanted, which I found here. But, it had more butter than I wanted. After I tweaked the recipe, I discovered I had finally found the BEST recipe. INGREDIENT LIST
1 cup sugar
1 cup brown sugar, firmly packed
2 cups light corn syrup
2 sticks (1 cup) butter
2 cups (1 pint) heavy cream
2 teaspoons vanilla extract (Gail puts in a little bit more)
8 cups (2 pounds) pecans
parchment paper
DIRECTIONS
Prepare the area where you are going to spoon out the pecan pralines when they are done. I put a towel on the counter and cover the towel with parchment paper. The only reason I use a towel is to protect my counter from the hot pralines. DO use parchment paper and not wax paper. The first time I made these, I used waxed paper, and it was a total disaster. The pralines stuck like crazy. So, DO use parchment paper and very, very lightly butter the paper.
In a non-stick very large pan, like a Dutch Oven (see the link above for a good non-stick Dutch Oven), combine sugar, brown sugar, and corn syrup. Heat over medium heat. (You can go a little higher than medium heat, but not quite to medium-high.) Stir constantly with a silicone high-heat whisk and heat until a candy thermometer reaches 250 degrees. (See link above for a whisk and for a candy thermometer.) Remove mixture from the heat and add butter. Stir till melted. Gradually add heavy cream and stir. Put back on the heat and cook, stirring constantly, till the candy thermometer reaches 241 to 242 degrees. Remove from the heat and stir in the vanilla using the whisk. Add the pecans and stir using a high-heat spatula, being careful to not break the pecans. Make sure all pecans are coated with the mixture. (See link above.) Drop by spoonfuls onto your prepared parchment paper. Cool. Put in a closed container. If desired, you can use parchment paper or other paper and individually wrap the pralines. Authentic Louisiana Pecan Pralines! My Grandmother's Recipe The “Big Easy” Version!
These are the real deal! They are little mounds of praline heaven! These are amazing as Christmas treats or to be honest, in our house they are a year-round treat!
2 cups of pure cane sugar OR 1 1/2 cups regular pure cane sugar and 1/2 cup brown sugar
1 stick of REAL butter NOT Margarine (if using UNsalted butter add in 1/4 teaspoon of salt)
1 12oz can of Evaporated Milk NOT sweetened condensed milk
2 cups pecans (I rough chopped half and left half whole)
2 teaspoons vanilla extract
Plastic wrap to cover the bowl while in the microwave
NOTE* I am using a 1000 watt microwave. If you are using a 700 watt microwave, you will most likely need to add some time.
Have a cookie sheet lined with parchment, wax paper or foil . Spray lightly with cooking spray to hold parchment paper in place. Set aside.
In a microwave safe bowl (the bowl MUST be large enough as the mixture WILL cook up before it cooks back down) place sugar, butter & milk. Stir the milk and sugar as shown. Microwave on high for 3 minutes. Remove and stir now that the butter has had a chance to melt. Replace and microwave for 4 minutes. Remove and stir. Add in the vanilla extract and pecans. Stir well and microwave for 4 more minutes. Stir again. Microwave for approximately 3 more minutes. Remove and stir. Work quickly and drop by spoonfuls onto the parchment. The pralines should set up within 30-45 minutes. ENJOY!!!!
EASY FIX - The didn't set up right rescue:
NOTE* The weather CAN impact any candy making. If yours didn't set up solid, here is the no fail fix. Simply scrape them back off of the parchment paper. Place back into the bowl microwave and 2 minutes on high. Stir well and replace in microwave for 2 minutes longer. Stir well and QUICKLY lay out on parchment paper. They should definitely set up this time. I have been making these for well over 35 years and this didn't set up save has never failed me yet.

Betty's Pecan Pralines
Betty demonstrates how to make Pecan Pralines. This is a recipe that is composed of buttermilk, soda, sugar, butter, salt, vanilla, and pecans. The pralines are soft, as opposed to traditional sugary pralines. This has been one of my family's favorite confections for many years, and we usually have these pralines during the holiday season. However, they are delicious any time of the year!
Pecan Pralines
1 cup buttermilk
1 teaspoon baking soda
3 cups sugar
1 cup butter, melted and cooled to lukewarm
2 tablespoons light corn syrup
pinch of salt
1 teaspoon vanilla extract
3 cups chopped pecans
In a large pot, combine 1 cup buttermilk with 1 teaspoon soda, stirring until the soda is dissolved. Add 3 cups sugar, 1 cup melted butter, 2 tablespoons corn syrup, and a pinch of salt. Bring mixture to a boil over medium heat. Reduce heat and cook, stirring constantly, until mixture reaches soft ball stage (236 degrees F). Remove from heat and let stand until lukewarm (110 degrees F). Add 1 teaspoon vanilla and 3 cups chopped pecans. Beat until mixture begins to thicken and loses its gloss. Drop by tablespoonfuls (or size of your choice) onto waxed paper. Let stand until firm. Serve on a nice platter or in a candy bowl. You may store these in an airtight container. Or, you may freeze these and thaw when ready to serve. If you are having guests for New Year's Eve or New Year's Day, this is a gorgeous and luscious addition to your party. Pecan Candy/Pralines
Ingredients:
Pecans
Butter
Evaporated milk
Vanilla
Sugar
Directions:
1. In a pot melt 1 stick of butter.
2. Once the butter has melted, add 2 1/2 cups of sugar, 1 teaspoon of vanilla extract, and 12 oz of evaporated milk.
3. Stir continuously on a medium heat.
4. Once the mixture begins to thicken, add 1 cup of pecans. Continuously stir.
5. Remove from heat once the mixture is thick, smooth, and not runny.
6. Place spoon fulls on parchment paper.
7. Let cool for 1 hour.
8. Enjoy.
