Why Brine the pork chops?
Brining is the process of infusing proteins with salt, sugar, and flavors. Brining also tenderizes and moisturizes meat, mostly white meats. Typically, brining is the soaking of a protein in a solution of water (or another liquid such as apple juice, beer, or wine), salt, and spices for a number of hours in the refrigerator. This Brining is a process of osmosis. Osmosis, as you might remember from biology class during your school days, has something to do with molecules passing back and forth through a membrane (pork chops) until there are equal concentrations on each side. This is why the pork chop becomes moist and remains moist during the cooking process.
Pork Chops:
2 large Bone-in Pork Chops 1 thick or larger (I cooked one at a time)
salt and crushed black peppercorn to taste
Brine:
4 large chunks of fresh pineapple
3 Garlic Cloves crushed
1 cup Salt to 1 Gallon of water ratio (I used approx 2 liters of cold water)
2 tablespoons Soy Sauce
2 tablespoons Red Wine Vinegar
2 tablespoons Fresh Local Honey
2 bay leaves (for turkey brining)
Kitchen Tools:
Breville Control Freak Induction Cooker
8 Stainless Steel Frying Pan
Pyrex 16 oz Measuring Cup
Stainless Steel Whisk
Stainless Steel Tongs
6 Qt. Clear Square Polycarbonate Food Storage Container with lid (for brining)
Butcher BBQ Instant Read Digital Meat Thermometer
Basic Kitchen Steak Knife to score the fat cap on the pork chops
Brine:
Make sure you clean and dry a 6 Qt. Clear Square Polycarbonate Food Storage Container with lid. Then add your cold water, salt, and other brining ingredients. Mix till all is dissolved. Then add your pork chops to the brine, cover them, and store them in the refrigerator for up to six hours. You can use plastic wrap and place a layer over the water and extend the liner over the top to lock it in place with the lid. This will prevent the air in the container from contacting the brine. How long should you brine for? Some say one hour per pound. I went for just under four hours.
Step 1:
Wipe off any liquid on the pork chops and dry them off. Cut the fat cap to prevent shrinking. Preheat your oven to 170℉.
Step 2:
Season the chops with black pepper and very little salt. Heat some Olive oil in a sauté pan and when you reach a temp of 325℉ add the chops.
Step 3:
Create some fond by allowing the Maillard reaction to occur on both sides of the pork chop. The fond will come in handy if you plan to create a sauce. (on this video I did not)
Step 4:
After the Maillard reaction is complete you need to place the frying pan in the oven. Take readings every ten minutes with your Butcher BBQ Instant Read Digital Meat Thermometer. Once you reach a temp of 140℉ plus in the thickest part then you are done.
Step 5:
Once you reach 140℉ and have removed the pork chop from the oven let it rest for about ten minutes. Now you can take a bite of that juicy pork chop!
Note: When you score the fat cap every two inches the pork chop will relax during the cooking process and remain flat in the pan.
