How To make Carne Guisada (Beef Stew)
Carne Guisada (Beef Stew) No. 2426 Yields 6 Servings
2 Lb Boneless Beef Chuck 2 Cups Beef Stock
1 Tbls Vegetable Oil 2 Tbls Tomato Paste
2 Cloves Garlic, Peeled 3/4 tsp Salt
1 Onion, Peeled & 2 tsp Chili Powder
Quartered 1 tsp Cumin 2 Green Chiles, Roasted 1/8 tsp Black Pepper
& Peeled - Flour Tortillas 2 Fresh Tomatoes
Trim the fat, gristle and connective tissue from the meat. Fry the trimmings in a large (3-4 quart) stockpot until about 2 tablespoons (for 6 servings) of fat have been rendered. Discard the trimmings. Add oil to the fat in the pan. Set aside. Cut the meat into 1 1/2" cubes. Set aside. Mince the garlic, onion and chiles together. Peel and pulp the tomatoes. Add to the onion mixture. Heat the fat in the stockpot. Sear the meat over high heat until browned on all sides. Reduce heat. Add the tomato and onion mixture. Add all the remaining ingredients except the tortillas. Cover. Simmer until the meat is tender and the liquid becomes a rich sauce (1 1/2-2 hours). Adjust seasonings. Serve with tortillas. NOTE: The meat filling can be spooned onto the tortillas.

CARNE GUISADA (cooked beef stew ) TEX- MEX STYLE is a dish I grew up with, It's chunky pieces of beef simmered in a delicious brown gravy loaded with flavor until falling apart tender. The spices of cumin, garlic, peppercorns and onions are a few of the must have ingredients. It is a simple dish to prepare. This dish brings back many memories of my childhood, we looked forward to the day my mom served it, I love siding it with refried beans, mexican rice or mashed potatoes and flour tortillas on the side, I smear some refried beans in the tortilla then fill it with CARNE GUISADA giving me the most amazing delicious messy taco. For an added kick I love a couple of spoonfuls of molcajete salsa to top it. CARNE GUISADA is a dish that will always satisfy.
INGREDIENTS
3 LB. Chuck pot roast (not shoulder roast) chuck roast is the only one I like)
2-3 Tbsp vegetable oil divided (extra if needed)
1 medium onion (chopped)
2 green onions (white and green)
3/4 med/lrg green Bell pepper (diced)
1/4 yellow Bell pepper (diced)
1 & 1/4 tsp whole cumin (molcajete crushed)
3/4 - tsp peppercorns
3 Lrg Garlic cloves
2 Tbsp All purpose flour
2 Lrg Roma tomatoes
1 & 1/2 tsp Chili powder (I used Gebhardts)
1 Tbsp tomato paste
2 & 1/2 tsp Chicken bouillon
Salt to your liking (I used 1 tsp)
2 &1/2 C. water (you decide
● searing will caramelize your meat
● sear quickly until golden brown and set aside
● cook for 1 and 1/2 - 2 hours for falling apart tender

THINGS YOU’LL NEED:
2 pounds beef roast use beef round of chuck steak
1 tablespoon adobo seasoning or more to taste
3 tablespoons vegetable oil
1 small onion chopped
1 green bell pepper chopped (or use hotter peppers, if desired)
¼ cup sofrito
4 cloves garlic minced
1 teaspoon dried oregano
8 ounces tomato sauce
1/2 cup water
1 tablespoon achiote oil
½ cup olives
1 tablespoon capers
2 bay leaves
1 pound potatoes cut into bite-sized pieces
1 large carrot peeled and cut into bite-sized pieces
Salt and black pepper to taste

Today, we’re making my version of my personal Puerto Rican favorite - carne guisada! ???? This rich and hearty beef stew goes perfectly with some white rice, tostones, and aguacate ????. It can even go well with some mashed potatoes!
Remember that everything can be adjusted to your liking. ❤️✨
Ingredients used:
Beef seasoning:
• 1.5lbs beef (any cut of beef will do)
• 1tsp sea salt
• 1/2 tsp garlic powder
• 1/4 tsp oregano
• 1/4 tsp black pepper
• Extra virgin olive oil
For the stew:
• 1-2 garlic cloves, smashed + chopped
• 2 heaping tbsps sofrito
• 4oz tomato sauce
• 1 bay leaf
• 1/2 tsp sugar
• 1 beef bouillon
• 1 packet sazón con achiote
• 2-3 tbsp red wine (optional - makes a stronger flavored broth)
• Carrots + potatoes (however much you prefer)
• 1 guineo verde (green, unripe banana) - optional
• Enough water to cover everything (about 3 cups)
• Salt to taste
