How To make Cheesy Macaroni and Broccoli
5 oz Cheddar cheese, cubed
5 oz Mozzarella cheese, cubed
3 C cooked elbow macaroni
2 C broccoli florets
1 large red bell pepper, diced small
1/2 C real or imitation bacon bits
1 TBSP mustard
pinch of chili powder 1 1/2 C evaporated milk
Lightly oil large baking dish. Wipe with paper towel to remove excess oil. Combine all ingredients except milk in large pan. Pour into baking dish. Pour milk over all. Bake at 450* about 20 minutes, until bubbly and golden.

Medium Shell Pasta▪️4 Tbsp Butter▪️1/4 Cup Flour▪️4 Cups Skim Milk▪️2+1/2 tsp Kosher Salt▪️1 tsp Black Pepper▪️1 Dash Nutmeg▪️1 Dash Cayenne Pepper (optional)▪️1/2 tsp Garlic Powder▪️1/2 tsp Paprika▪️1 lb. Frozen Broccoli Florets, rough chopped▪️2 Cups Sharp Cheddar Cheese▪️Parmesan Cheese, for serving (optional)▪️Toasted Panko Breadcrumbs, for serving (optional)▪️

????Vegan Modification: Sub in olive oil for butter, oat milk for milk, and plant based cheese for cheese

1️⃣ Bring a pot of generously salted water to a boil and then boil pasta until very al dente (1-2 mins less than package directions because it will finish cooking in the sauce); reserve 1 cup of pasta water just in case it's needed
2️⃣ In a pot over medium high heat, melt the butter and then add the flour; cook the flour whisking constantly for 1 minute and then start gradually pouring in the milk 1/2 cup at a time, whisking so that the milk gets fully incorporated before adding more
3️⃣ Once all of the milk is added, continue whisking until the white sauce starts to bubble and has thickened slightly, then add the kosher salt (2+1/2 tsp), pepper, nutmeg, cayenne, garlic powder, and paprika
4️⃣ Stir in the broccoli and pasta and cook for 2-3 more mins until pasta is desired tenderness (if your sauce looks thick you can add a little pasta water but I didn't need to)
5️⃣ Stir in the cheddar cheese, turn off the heat, and enjoy! Option to top with Parmesan cheese or toasted panko breadcrumbs

Smoky Broccoli Mac N Cheese, but made vegan. Ever since I stopped eating dairy cheese, my stomach has been thanking me.
This spice blend gives it a smoky flavor that goes great with summer BBQ food. Try it out.
RECIPE:
Ingredients:
10 ounces noodles
1-2 heads broccolini
1 shallot
Smokey Cheese sauce:
1 carrot
1 gold potato
1/2 c coconut milk from a can
1/4 c vegetable broth
1 lemon juiced (1/3 cup)
2 tbsp flour (I prefer chickpea flour)
3 tbsp nutritional yeast
1 tbsp tomato sauce
1/2 tbsp white miso paste
1 tsp smoked paprika
1 tsp turmeric
1 tsp garlic powder
1/2 tsp salt
1/3 tsp ground black pepper
DIRECTIONS:
FOR THE CHEESE:
1.) Peel the carrot and potato, then cut the carrot and potato into chunks about 1 inch big.
2.) Boil the carrot and potato in water for about 7 minutes. Or until a fork can easily slide in.
3.) Add the carrot and potato to a blender. Add all of the other ingredients to the blender. Blend everything until smooth.
FULL RECIPE:
1.) Cook your noodle using the instructions on the box.
2.) Chop the broccolini to about 1 inch pieces.
3.) Mince the shallot very small.
4.) Cook the shallot and broccolini on a pan for about 5 minutes.
5.) Add the noodles and the cheese sauce to the pan with broccolini. Cook on low for 2 more minutes then turn off the heat.
6.) Enjoy!
