How To make Chicken Breasts with Lemon and Pepper
4 skinned and boned chicken breast halves
1/2 tsp salt
2 tbsp butter or margarine
1 tbsp fresh lemon juice
fresh coarsely ground black pepper 1 1/2 tbsp finely chopped parsley
Place chicken breasts between 2 sheets of waxed paper and gently pound with a meat mallet until about 1/2 inch thick. Season with salt.
Heat butter in a large, heavy nonstick skillet over medium heat until bubbly and starting to brown. Add chicken and cook about 10 minutes, turning occasionally, or until almost opaque in center and golden on both sides. Remove to serving plates.
Remove skillet from heat and let pan juices cool briefly. Add lemon juice, and stir to loosen brown drippings in bottom of pan. Spoon over chicken, season well with pepper, then sprinkle with parsley.

Lemon and pepper flavoured baked chicken is a must try !
LEMON PEPPER CHICKEN
Ingredients
2 boneless chicken breasts
1 lemon
2 teaspoons crushed black peppercorns
½ cup chopped fresh coriander leaves + to garnish
Salt to taste
1 tablespoon ginger-garlic paste
2 tablespoons oil + for greasing
A few wedges of lemon
Method
1. Preheat oven to 180° C.
2. Put coriander leaves into a bowl. Grate lemon zest of half lemon into the bowl. Squeeze its juice into the bowl too.
3. Add salt, ginger-garlic paste, crushed black peppercorns and oil and mix well.
4. Slit the chicken breasts into half and add to the marinade, mix well and let it marinate for fifteen to twenty minutes.
5. Grease a baking tray and place the chicken breasts over it, cover the tray with an aluminium foil and bake in the preheated oven for ten to fifteen minutes.
6. Serve hot, garnished with coriander leaves and lemon wedges.

There’s no reason to eat plain chicken & rice when you can make this incredibly easy and delicious recipe. One of my favourite meal preps!
Macros per serving (4 servings total)
415 calories - 40g protein | 44g carbs | 8g fat
Ingredients (for 4 servings)
For the Chicken
- 700g Cubed Raw Chicken Breast
- 20ml Light & Dark Soy Sauce (Low Sodium)
- 1 tsp Paprika
- 1 tsp Garlic Powder
- 1 Lemon Juiced
- 2 tsp Olive Oil for cooking
- 10-15g Honey
For the Rice
- 480g Cooked Basmati Rice (120g per serve)
- 1 Red Onion finely sliced
- 1 Red Bell Pepper chopped
- 15ml Dark Soy Sauce
- 10g Honey
- 1/2 Lemon Juice
- Garnish Green Onion
Distribute into 4 equal servings & ENJOY!
