Ingredients:
3 pcs parsley
1/2 cup brussels sprouts
3 gloves garlic
Olive oil
Salt
Fresh black pepper
Basil oil
Dried thyme
Dried rosemary
Lemon zest
5 pcs chcicken legs/wings
Butter
Cumin
Fresh oregano
Method:
Clean and cut parsley, brussels sprouts and garlic.
To the bowl add olive oil and chopped vegetables. Add salt and peer. Mix it well.
Cut the chicken legs and dry it. Add salt, pepper, cumin, dried thymo and dried rosemary. Add basil oil.
Mix it well and put it to the bowl with vegetables. Add lemon zest and butter and fresh oregano. Put the aluminium foil on.
Preheat oven to 170 C / 356 F for one hour.
Turn the aluminium off and cook for another one hour.
Serve - i like it with potatoes and parsley puree.

EP2: BUTTER GARLIC PARSLEY CHICKEN - 牛油蒜香菜鸡
As I got slightly better at cooking, I moved away from ready-made marinades (ha. nando's marinade). Kinda saw one of those pre-marinated chickens at M&S and decided I wanted to try having a go at it myself! Here's a really simple marinade you can use for your chicken thighs. Fresh flat leaf parsley is always good. It adds such a nice refreshing flavour to the chicken.
Unfortunately we only had some old flat leaf parsley left in our fridge, so the parsley looks pretty grim. I've also done it before with dried parsley bits. They work just fine too.
A shout out to our friends who left some butter behind after cooking us a mean fish pie at our place a few weeks ago. The supermarkets are out of butter :(.
p.s. There's so much butter left after baking the chicken... I actually saved it for some baked rice that night. Recipe should be out soon! Enjoy!

Ingredients:
1 kg of Chicken Thighs
8-10 cloves of Garlic
Flat Leaf Parsley
2-3 tbsp Unsalted Butter
Olive Oil
Sea-salt
Ground Pepper
Bake chicken thighs in pre-heated oven at 180°C/ 356°F for 45 minutes to get a beautiful golden brown colour.

Roasted Sesame Chicken & Tomato-Parsley- Green Onion Salad The EC Way
ROASTED SESAME CHICKEN
Ingredients:
1 whole chicken (2.5-3 lbs)
1/4 cup Olive Oil
4 Tbsp Sesame Seeds
1/2 tsp ground black pepper
1.5-2 tsp salt (depending how big the chicken and how salty you want it)
1 tsp garlic powder
1.5 tsp paprika
1/4 onion powder
5 Bay Leaf
Steps: Preheat oven at 375F, bake settings. Prepare the spices and mix it well. Prepare the pan. Cover pan with aluminum foil and parchment paper. Dry and spatchcock the chicken. Pour olive oil in the pan. Coat the chicken with olive oil. Sprinkle the mix spices evenly on both sides of the chicken. Cook the chicken for 70-90 minutes at 350-375F depending how hot your oven, how big the chicken and how done you want it. Let it sit for 20-25 minutes before serving.
TOMATO-PARSLEY-GREEN ONION SALAD
250g cherry tomatoes
Fresh Parsley (probably a cup when finely chopped)
6 Fresh Green Onion/Spring Onion
1/2 tsp ground black pepper
1 tsp salt
2 tsp dried oregano
1/2 cup wine vinegar
1/2 cup olive oil
Steps: Wash the vegetables. Cut the cherry tomatoes in half, chop the parsley and green onions finely. Add black pepper, salt, dried oregano, wine vinegar and olive oil. Mix well. Chill in fridge for at least an hour before serving.

Ingredients
- 4 tablespoons cooking oil
- Juice of 2 limes
- 1/2 cup parsley
- 3 garlic cloves minced
- 4 tablespoons cooking oil
- Garlic powder
- Onion powder
- 1/2 teaspoon cumin powder
- Paprika
- salt
Note:
- Use fresh lime juice for the best flavour. Don’t go for the bottled stuff.
- Substitute with fresh cilantro if you don’t like parsley.
- If you like a bit of heat, add chilli powder or pepper flakes to the marinade.
